Description
Switch up your regular nachos with this DELICIOUS and colorful Sticky Beef Fatteh (or what I call Middle Eastern style nachos!). Ground beef is cooked down into a sticky, spiced sauce then loaded on top of crispy baked pita chips, quick pickled cucumber, lots of green tahini sauce, pomegranate seeds and fresh herbs.
Don’t be put off by the seemingly long ingredient list here – a lot of it is spices, and I’ve listed alternatives in the notes if there are things you can’t find.

For the Sticky Beef –
- 1lb/500g ground beef
- 4 garlic cloves, crushed
- 1 teaspoon cinnamon
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon coriander

- 2 tablespoons pomegranate molasses
For the Green Tahini Sauce –
- 1/2 cup tahini
- 1/2 cup chopped flat-leaf parsley leaves

- 3 tablespoons lemon juice

Quick Pickled Cucumber –
- 1 cucumber
- 1 tablespoon rice vinegar
- 1 teaspoon salt
To Serve –
- 2 tablespoons pomegranate seeds
- 1/4 cup chopped mint
- 1/4 cup chopped flat-leaf parsley
- 1 tablespoon dukkah (try making my easy dukkah recipe)
- 1/4 cup feta cheese, crumbled (optional)

Instructions
- Make the green tahini sauce. In the bowl of your food processor or blender, combine ½ cup of tahini, ½ cup of chopped flat-leaf parsley leaves, 3 crushed garlic cloves, 3 tablespoons of lemon juice, 1 teaspoon of salt, and 1/3 cup of water. Process until a thick, smooth, and vibrant green sauce forms, with a consistency similar to double cream. If you prefer a thinner sauce, gradually add more water, a tablespoon at a time, until it reaches your desired consistency. Set aside.
- Prepare the quick pickled cucumber. First, cut the cucumber in half lengthwise. Using a small spoon, carefully scoop out the seeds. This step is important as cucumber seeds contain a lot of water, and removing them will prevent your pickled cucumber from becoming watery. Next, chop the deseeded cucumber into small, bite-sized cubes. A good method is to slice each half into long, thin strips, then cut these strips into small cubes. Place the chopped cucumber in a small bowl, then add 1 tablespoon of rice vinegar and 1 teaspoon of salt. Mix well with a spoon and set aside to pickle while you prepare the beef.
- Cook the sticky beef. Heat 1 tablespoon of olive oil in a large pan or skillet over low heat. Add the crushed garlic, ground cumin, coriander, cinnamon, smoked paprika, chili flakes, and sumac. Cook the spices, stirring continuously, for about 1 minute until they become wonderfully fragrant and aromatic. Now, add the ground beef. Break it up with your wooden spoon or spatula, ensuring it’s evenly distributed and mixed with the spices. To achieve delicious crispy bits, try to resist stirring constantly; allow the beef to sit undisturbed for a couple of minutes to brown before stirring again. After browning, stir in 2 tablespoons of sticky, tart pomegranate molasses. The mince should now look beautifully brown and glossy. Continue cooking for another five minutes until the beef is fully cooked through. Remove the pan from the heat.
- Assemble the nachos. This dish is fantastic served as one large sharing plate, allowing everyone to dig in. However, you can also create individual portions if preferred. Arrange your homemade or store-bought pita chips in a circle or mound on your chosen large plate. Generously spoon the warm, sticky spiced beef mince over the pita chips. NO FOOD PROCESSOR? No problem for the tahini sauce! Simply add the 1/2 cup of tahini to a small bowl along with 2 crushed garlic cloves, 1/2 teaspoon of salt, and 1 tablespoon of lemon juice. Mix vigorously with a fork – it will initially become very thick and stiff. Gradually drizzle in 1/3 cup of water, continuing to mix with the fork until a creamy, cohesive sauce forms. It might feel like it won’t combine at first, but keep mixing, and I promise it will emulsify beautifully!
INGREDIENT NOTES: Feel free to customize your herbs; flat-leaf parsley, basil, or cilantro would be excellent in place of mint. If pomegranate seeds are not available, you can easily omit them. For the meat, lamb would be a fantastic alternative to beef, or you can use ground chicken or turkey, or a vegetarian mince option for a plant-based meal. While pita chips are wonderful, you can also use lightly toasted fresh pita bread; allow approximately 1 pita per person and chop it into triangles.
