Essential Ingredients for Your Delicious Curry
Crafting this flavorful Chickpea and Sweet Potato Curry requires a selection of readily available ingredients, ensuring you can whip up this dish any day of the week. Each component plays a crucial role in building the robust and well-rounded flavor profile that makes this curry so irresistible.
- Fresh Produce & Legumes: We start with a base of aromatic onion, naturally sweet sweet potatoes, protein-rich chickpeas, vibrant fresh spinach, and juicy tinned tomatoes. These fresh and wholesome ingredients form the backbone of our curry, providing essential nutrients and textures.
- Aromatic Spices & Seasonings: The soul of any great curry lies in its spices. Our blend includes pungent garlic and ginger, classic curry powder, earthy ground coriander, warm cumin, vibrant paprika, and a touch of cinnamon. These spices are carefully chosen to create a balanced and deeply fragrant aroma that permeates every bite. Don’t forget a pinch of salt and pepper to enhance all the natural flavors.
- Flavor Enhancer: A spoonful of tomato paste (or tomato puree for UK readers) is added to intensify the ‘tomatoey’ depth, lending a richer umami note to the sauce. This small addition makes a big difference in rounding out the overall taste.
- Creamy Base: The secret to our luscious sauce is full-fat coconut milk. Opting for full-fat coconut milk not only provides a wonderfully creamy texture but also infuses the curry with a richer, more authentic flavor. It’s also less likely to split during cooking, ensuring a smooth and velvety finish.
These ingredients come together in harmony to create a curry that is both deeply satisfying and incredibly healthy. Remember, quality ingredients form the foundation of an outstanding dish!

Simple Steps to Your Perfect Vegan Curry
Creating this delicious vegetarian and vegan-friendly curry is remarkably straightforward. With just a few simple steps, you’ll have a wholesome and flavorful meal on your table in under an hour. Here’s a quick overview of the cooking process; for the full recipe with detailed instructions, please refer to the recipe card below.
- Sauté Aromatics & Bloom Spices: Begin by softening the finely chopped onion in a large pan with a little oil. Once translucent, add the minced garlic and ginger, followed by your aromatic spices – curry powder, ground coriander, cumin, paprika, cinnamon, salt, and pepper. Cooking these spices briefly with the aromatics helps to ‘bloom’ them, intensifying their flavor and fragrance.
- Simmer to Perfection: Next, introduce the star ingredients: chunks of sweet potato, drained chickpeas, tinned chopped tomatoes, a boost of tomato paste, and the creamy full-fat coconut milk. Stir everything together, bring it to a gentle simmer, and let it cook for 20-30 minutes. This simmering time allows the sweet potatoes to become beautifully tender and the flavors to meld into a rich, cohesive sauce.
- Finish with Freshness: Just before serving, stir in the fresh baby spinach. The residual heat from the curry will quickly wilt the spinach, adding a lovely touch of green and a boost of nutrients. Serve immediately and enjoy!
This method ensures a well-developed flavor profile and perfectly cooked ingredients, making every bite a true delight. It’s a testament to how simple yet impactful a home-cooked meal can be.

Get Creative: Ingredient Swaps & Customizations
One of the best aspects of this Chickpea and Sweet Potato Curry is its incredible versatility. Don’t hesitate to experiment with different vegetables and legumes to suit your taste, use what you have on hand, or simply explore new flavor combinations. Here are some fantastic ingredient swaps that work wonderfully with this recipe:
- Sweet Potato Alternatives: While sweet potatoes provide a lovely natural sweetness and texture, you can easily swap them for other hearty vegetables. Try adding courgette (zucchini), bell peppers, butternut squash, mushrooms, cauliflower florets, or green beans. These vegetables can be added at the same stage as the sweet potato and will absorb the curry flavors beautifully. Adjust cooking time slightly based on the vegetable’s firmness.
- Chickpea Substitutions: If you’re out of chickpeas or simply fancy a change, a variety of tinned beans work perfectly. Great options include butter beans (lima beans), cannellini beans, or even kidney beans. All provide a similar creamy texture and absorb the sauce wonderfully.
- Tomato Base Variations: Instead of tinned chopped tomatoes, you can use 600ml (about 2.5 cups) of passata for a smoother sauce. For an even richer, more intensely tomato-flavored curry, consider adding a tablespoon of sun-dried tomato paste along with the regular tomato puree.
- Spice Level Adjustments: If you prefer a milder curry, reduce the amount of curry powder or choose a mild variety. For those who love heat, feel free to add a fresh green chili, finely chopped, with the ginger and garlic, or a pinch of cayenne pepper with the other spices.
- Add More Greens: Feel free to increase the amount of spinach or swap it for kale or Swiss chard, adding them in the last few minutes of cooking until wilted.
These simple adjustments allow you to tailor the curry to your family’s preferences or make the most of seasonal produce. The core flavor profile of the coconut curry sauce is robust enough to carry a range of vegetable combinations.

- ½ tsp black pepper
- 2 medium sweet potatoes (around 450g altogether) peeled and chopped into 2cm chunks
- 1 x 400 g (1 x 14 oz) chickpeas drained
- 2 x 400 g (2 x 14 oz) chopped tomatoes

Instructions

Stir in the minced garlic, minced ginger, curry powder, ground coriander, cumin, paprika, ground cinnamon, salt, and black pepper. Cook for a further minute, stirring constantly, to allow the spices to bloom and release their full fragrance. Be careful not to burn them.2 cloves garlic, 2 tsp minced ginger, 2 tbsp mild curry powder, 1 tbsp ground coriander, ½ tbsp ground cumin, 1 tsp paprika, ½ tsp ground cinnamon, 1/2 tsp salt, ½ tsp black pepper
-
Add the chopped sweet potato, drained chickpeas, tinned chopped tomatoes, tomato puree (or paste), and the full-fat coconut milk to the pan. If the sauce begins to look too thick, you can add a splash of water or vegetable stock to reach your desired consistency.

Recipe Notes & FAQs
Absolutely! This curry tastes even better the next day as the flavors have more time to meld. Cook the curry completely, then allow it to cool quickly at room temperature. Once cooled, cover it tightly and refrigerate for up to two days. To reheat, gently warm it in a pan on the stovetop over medium heat, stirring often, until it is piping hot throughout. Alternatively, you can reheat portions in the microwave.
Can I freeze this curry?
Yes, this curry freezes wonderfully, making it perfect for meal prepping. After cooking the curry, allow it to cool completely. Transfer it to an airtight, freezer-safe container and freeze for up to 3 months. When you’re ready to enjoy it, defrost the curry overnight in the refrigerator. Reheat gently in a saucepan or microwave, stirring frequently, until it’s bubbling and hot throughout.
Ingredient Swap Ideas for Customization:
- For the sweet potato: Experiment with other vegetables such as courgette (zucchini), bell peppers, butternut squash, button mushrooms, cauliflower florets, or fresh green beans. Add these at the same stage as the sweet potato.
- For the chickpeas: Feel free to swap them for other tinned beans like butter beans (lima beans) or cannellini beans. Most types of tinned beans will work well in this recipe, offering a slightly different texture and flavor.
- For the tinned tomatoes: If you prefer a smoother sauce, you can use 600ml (approximately 2.5 cups) of passata instead of chopped tomatoes.
- For added protein (if not strictly vegan): Consider adding paneer cheese cubes during the last 10 minutes of simmering, or a handful of cooked lentils for an extra protein boost.
Scaling the Recipe Up or Down:
This recipe is easily scalable. You can halve the recipe to serve 2 or double it to serve 8, maintaining the same ingredient ratios.
If you are halving the recipe for 2 servings, the cooking time will remain approximately the same.
If you are doubling the recipe for 8 servings, you might need to extend the simmering time by about 10 minutes, as a larger quantity of sweet potato will take longer to become tender. Ensure you use a large enough pan to accommodate the increased volume.
Slow Cooker Method:
To make this curry in a slow cooker, follow the initial steps of sautéing the onion and blooming the spices in a pan. Then, transfer the onion-spice mixture, sweet potato, chickpeas, tinned tomatoes, tomato puree, and coconut milk to your slow cooker. Cook on high for 3-4 hours or on low for 5-6 hours, until the sweet potatoes are tender. Stir in the fresh spinach just before serving, allowing it to wilt in the residual heat.
