Ingredients
- 2 tbsp honey
- 1 tbsp whole-grain mustard
- 2 tbsp soft brown sugar
- 3 chicken breasts
- 2 large red-skinned potatoes, such as Albert Bartlett, chopped into bite-size chunks
- 1 large sweet potato, peeled and chopped into bite-size chunks
- 1 large carrot, peeled and chopped into chunks
- 1 large red onion, peeled and sliced into thick wedges
- 3 tbsp olive oil
- ½ tsp salt
- ½ tsp ground black pepper
- 150 g (5.3 oz) green beans, trimmed
- 220 g (7.8 oz) tender-stem broccoli, broken into thin stems
- 2 tbsp chopped fresh parsley, to serve
Instructions
- Preheat the oven to 200C/400F (fan).
- Mix together the honey, mustard, and brown sugar in a small bowl. This creates your delicious honey mustard glaze.
- Place the chicken breasts on a large baking tray or sheet pan. Brush the honey-mustard mixture generously all over the chicken breasts. Don’t worry if some drips off, it will meld with the vegetables.
- Arrange the chopped red potatoes, sweet potatoes, carrots, and red onion wedges around the chicken on the same sheet pan, ensuring they are in a single layer for even roasting.
- Drizzle two tablespoons of the olive oil over the chicken and vegetables, then sprinkle evenly with salt and ground black pepper. Bake in the preheated oven for 20 minutes.
- After 20 minutes, carefully remove the sheet pan from the oven. Using a spatula, gently move the vegetables around a little to ensure even cooking and color. Baste any juices from the pan, especially the flavorful mustard sauce, over the chicken breasts to keep them moist and infuse more flavor.
- Add the trimmed green beans to the sheet pan and cook for another 5 minutes. Then, add the tender-stem broccoli, drizzling the remaining olive oil over the broccoli and green beans. Continue to cook for a further 5-10 minutes, or until the chicken is thoroughly cooked through (internal temperature of 165°F/74°C) and the vegetables are tender-crisp and nicely caramelized.
- Once cooked, slice the chicken breasts into desired portions (or leave whole if serving for fewer people) and dish out the chicken and vegetables onto four plates.
- Garnish generously with freshly chopped parsley just before serving for a burst of freshness and color!
