This ensures more uniform cooking and easier handling.
  • Baking Powder (the secret ingredient!): This is the crucial element for achieving that incredible crispiness. It’s vital to use baking powder and absolutely NOT baking soda (bicarbonate of soda). Baking powder helps to raise the pH level of the chicken skin, which breaks down the peptide bonds in the protein, allowing the skin to dry out and crisp up beautifully during cooking. For best results and to avoid any metallic aftertaste, I recommend using aluminium-free baking powder.

Air Fryer Crispy Chicken Wings

These crispy chicken wings cook in the air fryer in 35 minutes. The perfect party food! They taste great on their own or smothered in your favourite sauce.

Ingredients

  • 2.2 lbs (1 kg) chicken wings
  • 1 level tbsp aluminium-free baking powder*
  • ½ tsp table salt
  • ½ tsp pepper

Instructions

  1. Start by preparing your chicken wings. Cut each whole wing at the joint to separate it into a mini-wing and a drumette. You can discard the wing tips or save them for making chicken stock.
  2. The next step is crucial for crispiness: thoroughly dry the chicken wing pieces using paper towels. Once dry, place them in a large bowl. Add the baking powder, salt, and pepper. Toss all the ingredients together until the wings are evenly coated with a light, fine layer of the seasoning mixture. Ensure there are no clumps of baking powder.
  3. Preheat your air fryer to 210°C (410°F). Arrange the seasoned chicken wings in a single layer in the air fryer basket, making sure not to overcrowd it. Cook for 30-35 minutes, shaking the basket vigorously every 10 minutes to ensure even cooking and browning on all sides. The wings should be golden brown and crispy, with an internal temperature of 74°C (165°F).
  4. Once cooked to perfection, transfer the crispy air fryer chicken wings to a serving platter. Serve them immediately on their own, or toss them in your favorite sauce for an added layer of flavor. Enjoy!

Notes

*Baking Powder

I specify using aluminium-free baking powder in this recipe. Some individuals are sensitive to baking powder that contains aluminum (sodium aluminium sulfate or E521), which can impart a metallic taste. Using an aluminum-free variety helps avoid this potential issue.

It is also absolutely essential to use baking powder and not baking soda (bicarbonate of soda). While both are leavening agents, they react differently and baking soda will not provide the desired crispiness for this recipe.

For oven-baked chicken wings, I typically use 2 tablespoons of baking powder. However, the air fryer is incredibly efficient at crisping, so you can achieve fantastic results with less, making 1 tablespoon sufficient for this recipe.

Can I make wings ahead?

While these wings are at their absolute best when enjoyed fresh out of the air fryer, you can prepare them in advance. Cook the wings as directed, then allow them to cool completely. Once cooled, cover them tightly and refrigerate for up to one day.

To reheat, place the refrigerated wings back in the air fryer and cook for about 5-6 minutes at 200°C (400°F) until they are heated through and regain their crisp texture.
