Herb Crusted Rack of Lamb

Ingredients

  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 3 tbsp fresh parsley, finely chopped
  • 55 g (1 cup + 1 tbsp) fresh breadcrumbs
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp dried rosemary
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • 6 or 7 bone rack of lamb, French trimmed

Rocket, herb and pomegranate salad:

  • 50 g (2 packed cups) rocket
  • small bunch parsley, roughly torn
  • small bunch fresh mint, roughly torn
  • small bunch chives, roughly chopped
  • seeds from ½ pomegranate
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • pinch salt
  • pinch black pepper

Instructions

  1. Preheat the oven to 200°C/400°F (fan). If using a Neff oven, heat using CircoTherm at 180°C/350°F.
  2. On one plate, mix together the honey, mustard, 1 tbsp of the olive oil, and 2 tbsp of the fresh parsley.
  3. On another plate, combine the breadcrumbs, dried thyme, oregano, rosemary, salt, pepper, and the remaining 1 tbsp of parsley.
  4. Generously coat the rack of lamb with the honey and mustard mixture, then roll it in the herby breadcrumb mixture until fully covered. Drizzle the remaining 1 tbsp of olive oil over the crusted lamb.
  5. Place the lamb, bone side down, on a wire rack set over a large baking tray. If you have a combination steam oven, select medium steam (this step is optional if you don’t have a steam oven).
  6. Cook for 20-25 minutes, or until the crust is golden brown and the lamb is pink in the middle. For medium-pink lamb, the internal temperature should be 60°C/140°F when checked with a meat thermometer (the temperature will continue to rise slightly during resting).
  7. While the lamb cooks, prepare the salad. In a large bowl, combine the rocket, parsley, mint, chives, and pomegranate seeds. In a separate small bowl, whisk together the olive oil, balsamic vinegar, pinch of salt, and pinch of black pepper to create the dressing. Drizzle the dressing over the salad and toss gently to coat the leaves evenly.
  8. Once the lamb is cooked, remove it from the oven and allow it to rest, covered loosely with foil, for 15 minutes (or 10 minutes if cooked with steam). After resting, carve the rack of lamb into individual slices. Divide the lamb slices among 3 plates and serve immediately with the fresh rocket and pomegranate salad.
