Anti-Inflammatory Turmeric Chicken Stew is a one-pot warming, comforting meal packed with nutrient-dense ingredients to have you glowing from the inside out.

Ingredients

  • 3 boneless, skinless chicken breasts (approx. 1 ½ pounds), cut into bite-sized pieces
  • 2-3 tablespoons avocado oil, divided
  • 2 sweet potatoes, peeled and cut into 1-inch cubes
  • 1 medium onion (about 1 cup), diced
  • 1 medium carrot (about ½ cup), diced
  • 1 celery stalk (about ½ cup), diced
  • 4 cloves garlic, minced
  • 1 inch knob fresh ginger, minced
  • 2 teaspoons turmeric
  • ½ teaspoon cumin
  • ½ teaspoon ground coriander
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper, to taste
  • 2 cups chicken bone broth
  • 2 tablespoons arrowroot starch
  • (1) 13.5 ounce can full-fat coconut milk
  • 2 cups baby spinach, roughly chopped
  • 1 tablespoon apple cider vinegar
  • Fresh cilantro, for garnishing (optional)
  • Lime wedges, for serving (optional)

Instructions

  7. Once the stew has finished cooking, turn off the heat. Stir in the chopped spinach and 1 tablespoon of apple cider vinegar. Remove the bay leaf, and taste for seasoning.
