The Ultimate Cherry Crumble Cake: A Symphony of Sweet, Tangy, and Crunchy Delight
There’s something uniquely comforting and utterly irresistible about a crumble cake, and this Cherry Crumble Cake is an absolute showstopper. It masterfully blends the best elements of two beloved desserts: the light, tender crumb of a classic cake and the glorious, buttery crunch of a traditional fruit crumble. Imagine sinking your teeth into a fluffy sponge, discovering a vibrant layer of tangy cherries, and then being met with an extraordinary, golden crumble topping that truly elevates every bite. It’s a texture and flavor experience you won’t soon forget, making it an essential addition to any baker’s repertoire.

This dessert truly embodies the idea of having “two puddings in one” – a moist, flavorful cherry cake base crowned with a spectacular crumble topping. It’s the kind of cake that doesn’t require a fork or spoon to handle (though you’ll definitely want one for extra servings!). The contrast between the soft cake and the crispy topping, coupled with the juicy bursts of cherry, creates a harmonious sensation that delights the palate with every mouthful. This isn’t just a cake; it’s a celebration of textures and flavors.
Beyond the Classic Crumble: A Treat for All Seasons
While traditional crumbles are often reserved for cooler weather, this Cherry Crumble Cake defies seasonal limitations. Its cake-like structure makes it less heavy than a typical crumble pudding, allowing it to be enjoyed all year round. The bright, fruity notes of cherry are particularly refreshing, making it perfect for summer gatherings, but the warm, comforting crumble ensures it’s equally welcome on a chilly evening. It’s a versatile dessert that fits any occasion, from a casual afternoon tea to a festive dinner party.
My passion for crumble toppings extends far beyond just this cake. I’m constantly dreaming up new ways to incorporate that irresistible buttery crunch into other treats. Beyond this delicious pud, I’ve experimented with delightful apple crumble cookies, which bring a taste of autumn in a handheld form. The possibilities are truly endless, and I’m always brainstorming new ideas. Perhaps crumble brownies for a rich, fudgy delight with a textural twist? Or light, airy crumble cupcakes for individual portions of joy? Even a sprinkle over homemade ice cream could be a game-changer! Imagine the cool creaminess meeting a warm, crunchy topping – a delightful contrast that promises to be a hit. Keep an eye out for these exciting creations, as they might just be next on the baking agenda!

Mastering the Art of Cherry Placement (and embracing imperfections)
One of the charming quirks of baking with fruit, especially heavier varieties like whole cherries, is their tendency to migrate to the bottom of the cake batter during baking. I must confess, my cherries did indeed sink in my first attempt at this recipe. While I had hoped the thick cake batter would keep them suspended evenly throughout, the sheer weight of the whole cherries proved too mighty. However, don’t let this minor detail deter you! Even with all the cherries nestled at the bottom, the cake tasted utterly divine. The concentrated burst of cherry flavor at the base provides a wonderful surprise, complementing the fluffy sponge and crunchy topping perfectly.
In fact, my grandad was so enamored with this cake that he was literally swatting people away to guard his second (and third!) helpings, ensuring he had enough left over for the next day. A true testament to its irresistible flavor, even with slightly “sunken” cherries! If you’re keen to keep your cherries more evenly distributed, a simple trick is to lightly dust them with a tablespoon of flour before folding them into the batter. This helps them cling to the cake mixture and prevents them from sinking as rapidly. However, rest assured, whether they float or sink, the incredible taste remains.
Elevating Your Crumble: The Power of Nuts and Sour Cream
For this recipe, I chose to incorporate chopped walnuts into the crumble topping, adding an extra layer of crunch and a wonderful nutty depth that complements the cherries beautifully. Walnuts provide a robust texture and earthy flavor that stands out. However, don’t feel limited to just walnuts; this crumble is incredibly versatile. Pistachios would offer a delicate, slightly sweet crunch and a beautiful color. Pecans would bring a rich, buttery note, while hazelnuts would add a distinct, robust flavor. Even slivered almonds could provide a subtle crispness. Feel free to experiment with your favorite nuts or even a combination to create your signature crumble topping.
Another key ingredient that sets this cake apart is the addition of soured cream. This seemingly small detail makes a significant difference, resulting in a richer, more tender, and incredibly moist cake crumb. Soured cream’s acidity reacts with the baking powder, promoting a lighter texture, while its fat content contributes to a velvety mouthfeel. If soured cream isn’t readily available or you prefer an alternative, you can easily substitute it with buttermilk for a similar tangy richness, or full-fat Greek or natural yogurt for a slightly milder, yet still moist, result. These alternatives will ensure your cake remains wonderfully tender and flavorful.
Fresh vs. Frozen Cherries: What You Need to Know
I typically use frozen cherries for convenience, and they work perfectly in this recipe. They maintain their shape well during baking and release just the right amount of juice to create a luscious, tangy fruit layer. A crucial tip when using frozen cherries is to NOT defrost them beforehand. Adding them directly from the freezer prevents them from becoming too soggy and watery, which can alter the cake’s texture. The colder temperature of the frozen fruit also helps to keep them suspended in the batter for a little longer, though as mentioned, some sinking is normal and delicious.
If you opt for fresh cherries, which will provide an even brighter, more vibrant flavor, you’ll need to make a slight adjustment to the baking time. Fresh cherries tend to cook faster and release their moisture more quickly than frozen ones. Therefore, if using fresh cherries (pitted, of course), reduce the baking time by approximately 10-20 minutes. Always keep an eye on the cake and use the skewer test to ensure it’s cooked through. Whether fresh or frozen, ensuring your cherries are pitted is paramount for an enjoyable eating experience.

Ingredients
Cake:
- 175 g (1 1/2 cups) unsalted butter room temperature
- 175 g (3/4 cup) golden caster sugar
- 2 large eggs room temperature
- 1 tsp vanilla extract
- 85 g (1/2 cup) soured cream
- 175 g (1 1/2 cups minus 1 tsp) self raising flour
- 1 tsp baking powder
- ½ tsp salt
- 250 g (2 1/4 cups) frozen cherries don’t defrost or they’ll go too soggy
Crumble topping:
- 140 g (1 cup + 2 tsp) self raising flour
- 85 g (5 1/2 tbsp) cold butter chopped into chunks
- 70 g (1/3 cup) light brown muscavado sugar
- 55 g (1/2 cup) chopped walnuts
Instructions
-
Preheat your oven to 180C/350F (fan).
-
Line the base of a 20cm loose bottomed cake tin with baking parchment and put to one side.
-
Make your crumble topping first. Place your butter and flour in a bowl. Rub the flour into the butter with your fingertips until you have rough breadcrumbs.
-
Add the sugar and walnut pieces and stir together. Put to one side.
-
Next make the cake. Using a mixer, beat the butter and sugar together until pale and creamy.
-
Stir in the eggs, vanilla extract and soured cream.
-
Then gently fold in the flour, baking powder and salt.
-
Finally stir in the frozen cherries.
-
Pour the cake batter into the cake tin. Spread it around so that it’s reasonably level, then sprinkle the crumble topping on then place in your preheated oven for 50-65 minutes – until an inserted skewer comes out clean. TIP: It’s worth covering the cake with some tinfoil after about 40 minutes to prevent the top from burning.
-
Once cooked, take out of the oven and leave to cool in the tin for at least 20 minutes. Then remove from the tin and leave to cool further on a cooling rack.

Pro Tips for Baking Your Best Cherry Crumble Cake
- Room Temperature Ingredients: Ensure your butter and eggs for the cake batter are at room temperature. This allows them to cream together more easily and evenly, resulting in a smoother batter and a more uniform, tender crumb. Cold ingredients can lead to a lumpy batter and a denser cake.
- Don’t Overmix: Once you’ve added the flour, mix just until combined. Overmixing develops the gluten in the flour, which can lead to a tough cake. A light hand will keep your sponge wonderfully delicate.
- Prevent Burning: The crumble topping can brown quickly in the oven. As noted in the recipe, if you see the top getting too dark after about 40 minutes, loosely cover the cake with aluminum foil. This will protect the crumble while allowing the cake to continue baking through.
- Cooling is Key: While it’s tempting to dive into a warm cake, allowing it to cool in the tin for at least 20 minutes before transferring it to a cooling rack is crucial. This helps the cake to set, preventing it from crumbling or breaking when you remove it. Fully cooling the cake on a rack ensures the perfect texture and makes slicing easier.
- Check Your Oven: Ovens can vary widely in temperature. If you find your cakes consistently bake too fast or too slow, consider using an oven thermometer to verify its accuracy. Adjust baking times as needed based on your oven’s performance.
Serving Suggestions and Perfect Pairings
This Cherry Crumble Cake is delightful on its own, but it truly shines when paired with certain accompaniments. A dollop of freshly whipped cream provides a luxurious touch, its richness complementing the tangy cherries. For a classic British dessert experience, serve it warm with a generous scoop of vanilla custard or a scoop of homemade vanilla bean ice cream that slowly melts into the warm cake. The warmth of the cake against the cold ice cream creates an exquisite sensation that is simply heavenly. For those who enjoy a bit more tang, a scoop of crème fraîche or even a drizzle of lemon glaze could add another layer of flavor. It’s also perfect with a hot cup of tea or coffee, making it an ideal treat for breakfast, brunch, or an afternoon pick-me-up.
Customizing Your Cherry Crumble Cake
One of the joys of baking is the ability to adapt and customize recipes to suit your taste. This Cherry Crumble Cake is a fantastic base for various delicious variations:
- Fruit Variations: While cherries are stellar, consider swapping them for other fruits. Apple crumble cake is a timeless classic, while mixed berry crumble cake (strawberries, raspberries, blueberries) offers a burst of summer flavor. Peach, plum, or even rhubarb could also work beautifully, offering different levels of sweetness and tartness.
- Spice it Up: Enhance the flavor profile by adding spices to either the cake batter or the crumble topping. A pinch of ground cinnamon, nutmeg, or allspice in the cake will add warmth. For the crumble, a hint of almond extract or a tiny bit of cardamom could introduce an exotic note that pairs wonderfully with cherries.
- Nut Alternatives: As mentioned, walnuts are just one option. Try pecans for a richer, more buttery flavor, or hazelnuts for a distinct, earthy crunch. For a nut-free option, you can simply omit them from the crumble, or add seeds like sunflower or pumpkin seeds for texture.
- Citrus Zest: A little lemon or orange zest in the cake batter can brighten the overall flavor, adding a fragrant, zesty lift that perfectly complements the cherries.
