Who says you ever have to outgrow the pure joy of chicken tenders? This beloved dish transcends age, bringing a smile to both children and adults. However, traditional fried chicken tenders often come with a heavy dose of unhealthy oils and a greasy texture. That’s where this recipe for Crispy Baked Potato Chip-Crusted Chicken Tenders steps in, offering a sophisticated, healthier, and utterly delicious spin on a timeless favorite.

My unique recipe takes a nostalgic trip down memory lane by incorporating a surprising ingredient: potato chips! This brilliant addition is the secret to achieving an extraordinary level of crispiness that rivals even deep-fried versions. You’ll be astonished that these chicken tenders are entirely oven-baked, delivering all the crunch you crave without the added grease and calories of frying.

Beyond the incredible texture, this recipe caters to dietary preferences by being entirely egg-free. Instead of eggs, we use a simple coating of olive oil as the “glue” to ensure those flavorful chip crumbs adhere perfectly to the chicken. This not only makes the recipe accessible to those with egg allergies but also contributes to a lighter, more wholesome finished product.

Essential Ingredients for Crispy Potato Chip-Crusted Chicken Tenders

You’ll be delighted to know that a handful of simple, wholesome ingredients are all it takes to create these incredibly fun and flavorful chicken tenders. With just six main components (including your pantry staples like salt, pepper, and olive oil!), a plateful of crunchy goodness is within reach!

Ingredients laid out for potato chip crusted chicken tenders: chicken, chips, almond flour, olive oil, salt, pepper.
All the simple, wholesome ingredients you need for this irresistible recipe.
  • Chicken Tenders: For convenience, many grocery stores offer pre-packaged chicken tenders. These are ideal for this recipe as they are uniformly sized for even cooking. If tenders aren’t available, simply purchase boneless, skinless chicken breasts and slice them lengthwise into strips of similar size and thickness. Aim for about 1 pound of chicken for four servings.
  • Gluten-Free Potato Chips: This is where the magic happens! I highly recommend @sietefoods sea salt and vinegar chips. Not only are they incredibly delicious, but I also appreciate this brand for its commitment to using minimal, high-quality ingredients and healthier oils like avocado oil. Feel free to experiment with other gluten-free chip flavors – plain sea salt, BBQ, or even a spicy variety can add a unique twist to your tenders. Ensure they are certified gluten-free if you have sensitivities.
  • Almond Flour: This forms the foundational coating that helps the olive oil and potato chip crumbs adhere beautifully to the chicken. Almond flour also adds a subtle nutty flavor and contributes to the tender texture of the chicken inside the crispy crust. If almond flour isn’t available or you have a nut allergy, you can easily substitute it with cassava flour or any general-purpose gluten-free flour blend. The goal is a light, even coating.

  • Olive Oil: In this egg-free recipe, olive oil acts as the perfect binding agent, ensuring that the almond flour and crushed potato chip coating sticks securely to each chicken tender. Opt for a good quality extra virgin olive oil for the best flavor and health benefits. You’ll use it both for dipping and for a light spray before baking to enhance crispiness.
  • Salt and Black Pepper: These fundamental seasonings are crucial for bringing out the natural flavors of the chicken and complementing the savory potato chip crust. Adjust the amounts to your personal preference, but remember a good seasoning layer makes all the difference.
  • Dipping Sauces: The dipping sauce truly completes the chicken tender experience! The possibilities are virtually endless. My personal favorites to pair with these tenders include a classic, high-quality ketchup (like @primalkitchenfoods, known for its clean ingredients), a zesty buffalo sauce for a kick, or a sweet and savory Korean BBQ sauce. Don’t hesitate to explore your own favorites, whether it’s honey mustard, ranch, or a homemade aioli.

Step-by-Step Instructions for Perfectly Crispy Potato Chip Chicken Tenders

Follow these simple steps to create incredibly crispy, flavorful, and healthier chicken tenders right in your own kitchen. The process is straightforward, ensuring delicious results every time!

  1. Preheat Your Oven: Begin by preheating your oven to a consistent 400°F (200°C). This ensures the oven is at the optimal temperature for even cooking and maximum crispiness from the start.
  2. Prepare the Potato Chips: This is a key step for achieving that signature crunch! Carefully break your chosen gluten-free potato chips into small, fine crumbs. The easiest and most efficient way to do this is in a food processor, which will yield uniform crumbs. If you don’t have a food processor, no problem – simply place the chips in a sturdy zip-top bag, seal it, and crush them with a rolling pin or the bottom of a heavy pan until finely crushed.
  3. Set Up Your Breading Station: Organization is key for a smooth breading process. Arrange three shallow dishes or plates in a line:
    • Dish 1: Combine the almond flour with the salt and black pepper. Stir well to ensure the seasonings are evenly distributed.
    • Dish 2: Pour the olive oil into this dish.
    • Dish 3: Place your finely crushed potato chip crumbs here.
  4. Coat the Chicken Tenders: Take each chicken tender and follow this dipping sequence for a perfect coating:
    1. First, dip it into the almond flour mixture, ensuring it’s fully coated. Shake off any excess.
    2. Next, dip the flour-coated tender into the olive oil, allowing any excess to drip off.
    3. Finally, press the tender firmly into the potato chip crumbs, making sure all sides are generously covered.

As each tender is coated, place it on a greased baking sheet or one lined with parchment paper, ensuring there is space between each tender to allow air to circulate and promote crispiness.

  5. Initial Bake: Once all tenders are coated and arranged on the baking sheet, lightly spray the tops of the chicken tenders generously with a little more olive oil. This extra spritz helps achieve that beautiful golden-brown color and irresistible crunch. Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and lightly crispy.
  6. Second Olive Oil Spray (Optional, for extra crispness): After 20 minutes, remove the tenders from the oven. For an even crispier finish, lightly spray them one more time with olive oil. This is a small step that makes a big difference in texture.
  7. Broil for Golden Perfection: To achieve an extra crispy, golden-brown exterior, return the chicken tenders to the oven and broil for an additional 2 to 3 minutes. IMPORTANT: Watch them very closely during this step! Broilers can toast quickly, and the chips can burn easily if left unattended for too long. Remove them as soon as they reach your desired level of golden crispness.
  8. Cool and Serve: Once the tenders have finished broiling, remove them from the oven and allow them to cool slightly for a few minutes. This helps the coating set and prevents you from burning your mouth! Serve your perfectly crispy, oven-baked potato chip-crusted chicken tenders immediately with your favorite dipping sauces. ENJOY every delicious, crunchy bite!

Tips for Making the Best Crispy Chicken Tenders

Achieving perfectly crispy and flavorful chicken tenders is easy with a few insider tips:

  • Don’t Overcrowd the Pan: When placing the coated tenders on the baking sheet, ensure there’s enough space between each piece. Overcrowding can steam the chicken instead of crisping it, leading to a soggy crust. Use two baking sheets if necessary.
  • Pat Your Chicken Dry: Before coating, gently pat the chicken tenders dry with paper towels. Excess moisture can prevent the breading from sticking properly and result in a less crispy exterior.
  • Experiment with Chip Flavors: While sea salt and vinegar chips offer a delightful tang, don’t limit yourself! Try BBQ chips for a smoky flavor, sour cream and onion for a savory kick, or even spicy jalapeño chips if you enjoy a bit of heat. Ensure your chosen chips are gluten-free if needed.
  • Mind the Broiler: The broiler is your secret weapon for extra crispiness, but it requires vigilance! Keep a close eye on the tenders as they broil, as they can go from perfectly golden to burnt in a matter of seconds. Stay near the oven and remove them as soon as they reach your desired level of crispness.
  • Even Coating is Key: Take your time during the breading process to ensure each tender is thoroughly coated in flour, then olive oil, then potato chip crumbs. A complete and even coating is essential for that uniform crunch.
  • Internal Temperature Check: To ensure the chicken is safely cooked, use a meat thermometer. Chicken tenders are done when they reach an internal temperature of 165°F (74°C). This prevents overcooking, which can lead to dry chicken.

Crispy, crunchy, and just fun to eat, these Potato Chip-Crusted Chicken Tenders are a sure way to please your family and friends! Serve with your favorite dipping sauces.

Ingredients

  • 1 pound chicken tenders
  • 1 bag gluten-free, seed oil free potato chips (I used Siete Foods sea salt and vinegar chips)
  • 1 ½ cups almond flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup olive oil
  • Dipping sauces for serving (I used Primal Kitchen ketchup, buffalo sauce, and Korean BBQ sauce)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Break the chips up into small crumbs. This is easiest in a food processor, but you can also break them up in the bag.

  3. Set up your “breading” station by adding the almond flour, salt, and pepper to a low dish. Add the olive oil to a second dish and add the chip crumbs to a third dish.

  4. Dip the tenders in the flour first, then in the olive oil, then in the chips, and place on a greased sheet pan.

  5. Spray the chicken tenders generously with olive oil and bake for 20 minutes until lightly crispy.

  6. Remove from the oven and lightly spray with olive oil once cooked.

  7. Broil for 2 to 3 minutes to get a nice crisp on the outside (watch closely because they can burn easily).

  8. Once the tenders have finished broiling, allow them to cool slightly and serve with dipping sauces of your choice. ENJOY!
