One of the most captivating elements of this soup is the “egg drop” technique, sometimes called “egg flower” soup. This refers to the mesmerizing way whisked egg is slowly streamed into the hot broth, instantly cooking into delicate, feathery ribbons. These beautiful “egg flowers” not only add a unique texture but also a subtle richness, making each spoonful a delightful experience. When combined with succulent pieces of chicken and the natural sweetness of corn, it transforms into the beloved Chinese chicken and sweetcorn soup that is a staple on restaurant menus worldwide.

Whether you’re serving it as a welcoming appetizer or as a centerpiece for a buffet of Asian-inspired dishes, this soup is a guaranteed crowd-pleaser. For a more substantial dinner, pair it with some complementary dishes. Think alongside a generous helping of fragrant egg-fried rice or crispy sesame prawn toast. These pairings create a balanced and fulfilling meal, ensuring even the hungriest family members are completely satisfied.

Mastering this soup means you’ll have a versatile recipe in your repertoire that’s both comforting and impressive. It’s perfect for chilly evenings, a quick lunch, or when you simply want to enjoy a taste of authentic Asian cuisine without the fuss. Dive into the details below to discover how effortless it is to bring this classic to life.

📋 Essential Ingredients for Your Perfect Chicken and Sweetcorn Soup

Creating an authentic and delicious Chinese-style Chicken and Sweetcorn Soup relies on a few key ingredients. The beauty of this recipe lies in its simplicity and the readily available nature of its components. Here’s a detailed look at what you’ll need to gather:

Ingredients for chicken and sweetcorn soup on a wooden board.
  • Chicken Breast: You’ll only need one small chicken breast to yield four generous servings of this soup. It should be finely diced into small, bite-sized pieces, approximately 1cm cubes, ensuring even cooking and a delightful texture in every spoonful. If you prefer a richer flavor and slightly softer texture, 2-3 chicken thighs can be used as a substitute. Ensure they are boneless and skinless, then diced similarly.
  • Chicken Stock (or Chicken Broth): The foundation of any great soup is its stock. A good quality chicken stock is crucial here, providing depth and a savory base. Feel free to use homemade chicken stock for the best flavor, or opt for stock made from high-quality stock cubes or store-bought broth. Ensure it’s low-sodium if you want more control over the final seasoning.
  • Sesame Oil: This ingredient is a non-negotiable for authentic Chinese flavor. A drizzle of sesame oil at the beginning of the cooking process imparts a wonderfully aromatic, slightly nutty essence that elevates the soup’s profile. It’s a small addition that makes a significant difference.
  • Sweetcorn: Tinned corn kernels are perfectly acceptable and convenient for this recipe. For an interesting texture, I recommend mashing about half of the kernels slightly before adding them to the soup. This creates a creamy-corn paste that thickens the broth naturally while still leaving plenty of whole kernels for delightful bursts of sweetness. If you have access to creamed corn, you can use that for a smoother consistency, though it’s less common in some regions.
  • Cornflour (Corn Starch): To achieve that signature silken texture and slight thickness, a cornflour (corn starch in the US) slurry is essential. This is simply cornflour mixed with a small amount of cold water, creating a smooth paste that prevents lumps when added to the hot soup. It helps to bind the ingredients and give the soup its comforting body.
  • Eggs: The star of the “egg drop” technique! Fresh eggs, whisked vigorously, are gradually streamed into the simmering broth. This process creates those delicate, fluffy ribbons of egg that are characteristic of this beloved soup, adding both visual appeal and a tender texture.
  • Aromatics and Seasoning:
    • Garlic: Minced garlic provides an essential aromatic base, adding a subtle warmth and depth of flavor that is characteristic of many Asian dishes.
    • Salt: Essential for seasoning, the amount will depend on the saltiness of your chicken stock. It’s best to taste and adjust towards the end.
    • White Pepper: Unlike black pepper, white pepper offers a milder, more delicate warmth with a slightly earthy undertone, perfect for Asian cuisine without overpowering the other flavors.

👩‍🍳PRO TIP: Achieving the perfect fluffy egg ribbons is key! When adding the whisked egg mixture, pour it into the simmering broth in a **thin, steady stream** while simultaneously **gently stirring** the soup. This technique ensures the egg cooks into beautiful, delicate ‘feathers’ rather than clumping together, creating that classic silky finish.

🍽️ Elevate Your Meal: What to Serve with Chicken and Sweetcorn Soup

This versatile Chinese-style Chicken and Sweetcorn Soup can be enjoyed in many ways. While it makes a fantastic light meal on its own, it truly shines when served as part of a larger Chinese-inspired feast or buffet. Here are some fantastic companion dishes that will complete your culinary experience:

  • Crispy Prawn Toast: The crunchy texture and savory flavor of prawn toast make an excellent contrast to the smooth, comforting soup.
  • Salt and Pepper Chicken: A delightful pairing, offering a punch of bold, savory, and slightly spicy notes that complement the soup’s milder profile.
  • Coconut Shrimp: For a touch of sweetness and tropical flair, crispy coconut shrimp can add an exciting dimension to your meal spread.
  • Easy Crispy Duck: If you’re aiming for a more luxurious banquet, crispy duck served with pancakes and hoisin sauce is an undeniably delicious partner.
  • Baked Asian-style Cauliflower ‘Wings’: A fantastic vegetarian option, these flavorful cauliflower bites provide a satisfying crunch and savory taste that pairs well with the soup.
  • Egg Fried Rice: A classic and always welcome accompaniment. The subtle flavors of egg fried rice absorb the soup’s delicious broth beautifully, creating a hearty and complete meal.
  • Noodles: A simple side of plain or stir-fried noodles can turn this soup into a more filling main course.
  • Steamed Vegetables: For a lighter side, serve with some simply steamed broccoli, bok choy, or green beans, lightly seasoned with a dash of soy sauce and sesame oil.

No matter how you choose to serve it, remember that a sprinkle of fresh, vibrant spring onions (scallions) on top before serving adds a lovely final touch of flavor and color.

I love to top with lots of sliced spring onions before serving, as their fresh, slightly pungent flavor provides a perfect counterbalance to the rich broth and sweet corn.

Chicken and Sweetcorn Soup

By Nicky Corbishley

Easy Chinese-style chicken and sweetcorn soup, made from scratch, in less than 20 minutes. A quick family favourite!

Prep Time: 5 mins

Cook Time: 15 mins

Total Time: 20 mins

Servings: 4

Course: Appetizer, Starter

Cuisine: Chinese

Ingredients

  • 1 tbsp sesame oil
  • 2 cloves garlic, peeled and minced
  • 1 litre (4 cups + 3 tbsp) good quality chicken stock
  • 1 small chicken breast, approx. 150g/5.3oz, chopped into small chunks (approx.1cm cubed)
  • 200 g (7 oz) tin sweetcorn, drained
  • ⅛ tsp white pepper
  • 2 tbsp cornflour mixed with 6 tbsp water (cornstarch for US)
  • 2 medium eggs, whisked
  • ¼ tsp salt

To Serve:

  • 2 spring onions (scallions), chopped

Instructions

  1. Heat the sesame oil in a large saucepan over a low-medium heat.
  2. Add the minced garlic and cook gently, stirring continuously, for 1 minute until fragrant. Do not allow the garlic to brown.
  3. Pour in the chicken stock and add the diced chicken pieces. Increase the heat to bring the mixture to a rolling boil.
  4. Once boiling, reduce the heat and simmer gently for 5 minutes, ensuring the chicken is cooked through.
  5. While the soup simmers, prepare the sweetcorn. Give the drained sweetcorn a quick mash with the end of a rolling pin. The goal is to mush up about half of the kernels, creating a creamy texture, while leaving the other half whole for variety.
  6. Add the mashed and whole sweetcorn kernels to the pan, along with the white pepper. Stir everything together to combine the flavors.
  7. Bring the soup back to a gentle boil, then simmer for a further 5 minutes to allow the flavors to meld beautifully.
  8. Slowly stir in the prepared cornflour slurry. Continue to stir until the soup begins to thicken slightly, achieving a silky consistency.
  9. While still slowly stirring the soup, carefully pour the whisked egg in a thin, steady stream. As the egg hits the hot liquid, it will instantly cook and feather out into delicate ribbons.
  10. Taste the soup and add the salt if needed. The amount of salt required will depend on the inherent saltiness of your chicken stock. Adjust to your preference.
  11. Divide the hot soup evenly between serving bowls and garnish generously with chopped spring onions before serving immediately.

Notes & Expert Tips for Your Chicken and Sweetcorn Soup

Here are some additional tips and variations to help you perfect this delightful soup and adapt it to your needs:

Make Ahead & Storage:

This soup is a fantastic make-ahead option. Prepare the soup according to the instructions, then allow it to cool completely. Once cool, transfer it to an airtight container and refrigerate for up to three days. To reheat, gently warm in a saucepan over medium heat, stirring occasionally, or microwave in intervals until it is piping hot throughout. Ensure it is thoroughly heated before serving.

Make it Vegetarian:

Easily transform this recipe into a vegetarian-friendly dish. Simply replace the chicken stock with a good quality vegetable stock. For the protein component, you can use firm tofu, pressed and cut into small cubes, or incorporate vegetarian chicken-style chunks. Add these vegetarian proteins at the same stage as you would the chicken, ensuring they are heated through.

Scaling the Recipe:

This recipe is highly adaptable. You can easily double the ingredients to serve a larger crowd or halve them for a smaller portion, maintaining the same ingredient ratios. If doubling, note that the cooking time might increase by a few minutes to ensure everything is heated through. Halving the recipe typically retains the same cooking times, as the volume reduction is managed by the smaller ingredients quantity.

Using Cooked Chicken:

Have leftover cooked chicken? This recipe is perfect for it! Instead of starting with raw chicken breast, use pre-cooked, shredded, or finely diced chicken. In this case, there’s no need to simmer the stock for the initial 5 minutes with the chicken. Simply add the cooked chicken along with the sweetcorn and white pepper, then proceed with the rest of the recipe.

Creative Ingredient Additions:

Feel free to customize your soup with extra ingredients to boost flavor or nutrition:

  • Extra Vegetables: Enhance the vegetable content by adding peas, thinly sliced mushrooms, delicate mange tout, or small florets of broccoli. Incorporate these with the sweetcorn for optimal tenderness.
  • Root Vegetables: Small chunks of potato or carrots also work wonderfully. To ensure they cook properly, add them at the beginning with the chicken pieces and stock, allowing for an additional 5 minutes of simmering before the sweetcorn is introduced.
  • A Hint of Heat: For those who enjoy a bit of spice, stir in a dash of hot sauce, a pinch of chilli flakes, or some freshly minced ginger.
  • Umami Boost: A splash of soy sauce can significantly deepen the umami flavor of the soup, adding another layer of complexity.

With these notes and variations, you can confidently make this Chicken and Sweetcorn Soup a regular feature in your meal rotation, tailored perfectly to your taste and dietary needs.
