Yes, this salad is perfect for making ahead! You can prepare it up to a couple of hours in advance. Simply cover it tightly and store it in the fridge until you’re ready to serve. Just give it a quick stir before bringing it to the table to redistribute the flavors and juices. If you wish to prepare it up to a day ahead, you might notice the tomatoes releasing more liquid and the coriander wilting slightly, but rest assured, it will still taste wonderfully fresh and delicious. The slight softening of the vegetables can even enhance the overall flavor profile.
Can I freeze it?
No, I do not recommend freezing this salad. Tomatoes have a high water content, and upon defrosting, they will become mushy and lose their desirable texture, significantly detracting from the salad’s quality. This dish is best enjoyed fresh.

- Herbs: For a delightful twist, swap out all the fresh coriander for fresh mint, or use a combination of half mint and half coriander. You could also experiment with adding a touch of fresh parsley for a different herbaceous note.
