Welcome to a culinary journey that brings the vibrant flavors of California’s coast right to your kitchen: a recipe for Fish Tacos piled high with fresh toppings and elevated by not one, but two extraordinary sauces – a creamy garlic Mexican crema and a fiery hot green chili salsa. This isn’t just any fish taco recipe; it’s a taste of a dream vacation, a perfect blend of fresh seafood, zesty tang, and a kick of spice that will transport your senses.

The Morro Bay Inspiration: A Culinary Revelation
This cherished recipe is deeply rooted in a memorable family holiday to California a few years ago. My husband Chris, our children, my parents, and I embarked on an unforgettable 16-day adventure, traveling from the iconic cityscape of San Francisco all the way down to the sun-drenched shores of San Diego. It was truly a dream itinerary, punctuated by enchanting stops in picturesque Carmel, the serene beauty of Morro Bay, the bustling beaches of Santa Monica, the dazzling lights of Las Vegas, the awe-inspiring grandeur of the Grand Canyon, and, of course, the magical realm of Disney.
Beyond the breathtaking sights and sounds, the trip also offered the precious opportunity to reconnect with family living across the pond. And for Chris, it was an added thrill to spend a week cruising in this beauty:

One particular highlight of our journey was our stay in Morro Bay. My parents generously whisked the kids away for a few days, allowing Chris and me some much-needed time to ourselves. If you’ve never experienced Morro Bay, I highly recommend it. It’s an exceptionally tranquil and peaceful haven, where the only regular interruption to the calm is the playful barking of sea lions. We found a gorgeous hotel with a balcony that extended right over the water, offering us a front-row seat to watch the sea lions swim right up to the water’s edge, as if to greet us.
Just a short, delightful stroll from our hotel was Giovanni’s Fish Market and Café, a true gem where they served the most exquisitely fresh fish I have ever tasted. The quality was unparalleled, making it an instant favorite. We were so captivated by their offerings that we ended up dining there three times in our three-day stay. In fact, we had to invent additional meal times just to ensure we could sample everything we wanted!
Among all the delectable dishes, my absolute favorite was undoubtedly the fish tacos, served with a vibrant salsa verde and a creamy Mexican crema. Picture this: sitting outdoors, the gentle, warm sea breeze washing over us, gazing out at the magnificent Morro Rock, all while savoring incredible food in the company of my wonderful husband. It was pure, unadulterated bliss!
The moment we returned home, I was determined to recreate that magical taste. I immediately began experimenting, meticulously refining ingredients and techniques until I finally managed to capture the essence of those Morro Bay fish tacos. Since then, they’ve become a beloved staple in our home, a delicious reminder of that perfect trip.

Crafting the Perfect Fish Taco
While halibut, the traditional choice in many fish taco recipes, isn’t always readily available in supermarkets here in the UK where I live, don’t let that deter you. If I haven’t had the chance to make a special trip to a fishmonger, I’ve found that other white fish varieties work beautifully. Sea bass is an excellent substitute, offering a delicate flavor and flaky texture. Lemon sole, cod, and even haddock (be sure to avoid smoked haddock for this recipe) also perform exceptionally well, ensuring a delicious outcome every time.
Choosing Your Fish
The key to these Morro Bay-inspired fish tacos lies in the preparation of the fish. It needs to be pan-fried to perfection in butter, creating a beautiful, slightly golden-brown exterior. This cooking method locks in moisture, resulting in a tender, melt-in-your-mouth texture that is simply irresistible. The subtle richness of the butter complements the fish without overpowering its natural flavors.
The Essential Toppings
Once your fish is perfectly cooked, it’s nestled onto warm, soft tortillas or flatbreads. But the magic doesn’t stop there. These tacos are then generously adorned with an array of fresh, crunchy, and creamy toppings that provide a delightful contrast in both texture and taste. Imagine the crisp bite of thinly shredded cabbage, the subtle sharpness of red onion, the juicy burst of fresh tomatoes, and the comforting creaminess of shredded cheddar cheese. Each element plays a crucial role, building layers of flavor and ensuring every bite is exciting.
The Dynamic Duo: Two Sensational Sauces
As mouth-watering as these components sound already, we take them to an even higher level with two exquisite homemade sauces, each designed to complement and enhance the other. First, there’s a tongue-tingling salsa verde. This vibrant green salsa is a burst of freshness, packed with an abundance of fresh coriander and the lively kick of green chilies. It delivers a punch of herbaceous, spicy flavor that awakens the palate.
To balance that initial hit of chili, we add the second sauce: a garlicky, creamy Mexican crema. This luxurious sauce provides a soothing, cool counterpoint, its rich texture and subtle garlic notes mellowing the heat of the salsa verde while adding another dimension of flavor. Together, these two sauces create a harmonious balance of spicy and cool, tangy and rich, making these fish tacos truly unforgettable. I honestly can’t believe I haven’t shared this recipe on the blog sooner – I feel like I’ve kept a delicious secret from you for far too long! I truly hope you give them a try; they are, without a doubt, one of my all-time favorite fish meals.

Ingredients
For the Zesty Mexican Crema:
- 4 tbsp soured cream
- 4 tbsp double/heavy cream
- 2 tbsp chopped fresh coriander
- 1 small clove garlic, peeled and minced
- Juice of ¼ of a lime
- Good pinch of salt
For the Fiery Salsa Verde:
- 2 packed cups of fresh coriander
- 10 fresh basil leaves
- 5 spring onions/scallions, roughly chopped
- 2 green chilies, roughly chopped (adjust to your spice preference)
- 1 clove garlic, peeled and roughly sliced
- 2 tsp fish sauce
- Juice of ½ a lime
- Pinch of salt and pepper
For the Tacos:
- 4 soft white tortillas or flatbreads
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 seabass fillets – with the skin on (or swap for your favorite white fish like halibut, cod, or haddock)
- Pinch of salt and pepper
- ½ of a sweetheart cabbage, thinly sliced
- ½ a red onion, peeled and thinly sliced
- 8 cherry tomatoes, sliced into quarters
- ½ a cup of grated cheddar cheese
To Serve (Optional Garnishes):
- 1 red chili, thinly sliced
- Handful of fresh coriander, chopped
- Lime wedges
Instructions
- **Prepare the Mexican Crema:** In a small bowl, combine the soured cream and heavy cream. Stir in the chopped coriander, minced garlic, lime juice, and a good pinch of salt. Mix well until everything is thoroughly combined. Taste and adjust salt if necessary; it should be subtly tangy and savory. Cover with clingfilm and refrigerate for at least 30 minutes, or until ready to serve. This can be prepared several hours in advance to allow the flavors to meld beautifully.
- **Craft the Salsa Verde:** Place the fresh coriander, basil leaves, roughly chopped spring onions/scallions, green chilies (adjust quantity based on desired heat level), and sliced garlic into a food chopper or blender. Pulse a few times until the garlic and herbs are finely chopped but still retain some texture – avoid over-blending into a smooth paste. Add the fish sauce, lime juice, a pinch of salt, and pepper. Pulse once more to thoroughly combine all the ingredients. Taste the salsa; it should be fresh, a bit salty, and distinctly hot. Add a little more lime juice or salt if needed to achieve your preferred flavor balance. Spoon the salsa verde into a separate bowl, cover with clingfilm, and refrigerate until needed. Like the crema, this salsa also benefits from a few hours for the flavors to deepen.
- **Warm the Tortillas:** When you’re ready to assemble your delicious fish tacos, preheat your oven to its lowest setting (typically around 150°F or 65°C). Wrap the soft white tortillas (or flatbreads) in aluminum foil, ensuring you place a small piece of foil between each tortilla to prevent them from sticking together. Place the wrapped tortillas directly into the warm oven to gently heat them through. This keeps them soft, pliable, and warm, which is essential for a good taco experience, while you focus on the fish.
- **Pan-Fry the Fish:** Heat the olive oil and unsalted butter in a large frying pan over a medium heat until the butter is melted and slightly foaming. Season the seabass fillets generously with a pinch of salt and pepper on both sides. Carefully place the fish fillets, skin-side down, into the hot pan. Cook for 2-3 minutes, or until the skin turns a beautiful golden brown and becomes delightfully crispy. Flip the fillets over and cook for a further 2 minutes, or until the fish is opaque throughout and flakes easily with a fork. While you can remove the skin at this point if desired, cooking with the skin on actually helps to keep the fish incredibly moist and tender.
- **Rest the Fish:** Once the fish is cooked to perfection, turn off the heat but leave the fillets in the pan for a minute or two to rest. This crucial step allows the juices to redistribute, ensuring the fish remains succulent and flavorful when served.
- **Assemble the Tacos:** Take the wonderfully warm tortillas from the oven and arrange them on a serving platter or individual plates. Gently flake the cooked fish evenly among the warmed tortillas. Now, it’s time to add your fresh toppings! Distribute the thinly sliced sweetheart cabbage, sharp red onion, and vibrant quartered cherry tomatoes over the fish. Finally, sprinkle a generous amount of grated cheddar cheese over all the toppings.
- **Drizzle and Garnish:** To complete your masterpiece, drizzle a liberal amount of both the tangy garlic Mexican crema and the spicy green chili salsa over the fillings. For an extra touch of freshness and a visual pop, sprinkle with a little freshly chopped coriander and a few slices of red chili, if you enjoy extra heat and color.
- **Serve Immediately:** These Morro Bay Fish Tacos are best enjoyed fresh! Serve them immediately, ensuring you have extra bowls of the creamy Mexican crema, zesty salsa verde, and fresh lime wedges on the side. A squeeze of fresh lime juice just before eating adds a final bright, refreshing finish to each taco.
