  • Rinsing is Key: Unlike many other rice preparations (such as my fried rice tutorial where rinsing is often skipped), rinsing sushi rice is absolutely essential. Sushi rice is notably starchy, and a thorough rinse under cold water removes excess starch, preventing it from becoming overly glutinous and mushy. We aim for a pleasant stickiness that holds its shape, not an unappetizing glue-like consistency. Rinse until the water runs clear – it’s worth the extra minute!
  • Precise Cooking for Optimal Texture: Combine the rinsed rice with cold water in a saucepan. Bring it to a rolling boil, then immediately reduce the heat to low and cover tightly with a lid. Cook for exactly 10 minutes. This initial cooking phase allows the rice grains to begin absorbing moisture evenly.
  • The Crucial Resting Period: After 10 minutes, turn off the heat but keep the lid firmly in place. Let the rice rest undisturbed for 30 minutes. This resting period is critical; it allows the rice to continue steaming gently in its residual heat, ensuring every grain becomes wonderfully tender and fluffy without drying out or burning. Patience here is truly a virtue!
  • Seasoning for Signature Flavor: Once the rice has rested and cooled slightly, gently fold in a mixture of rice vinegar, sugar, and salt. An easy to prepare Salmon Sushi Bowl – all of the flavours of Sushi, in minimal time. Plus a 2-minute soy and ginger dressing that tastes way better than those little soy sauce plastic fish thingies!

Ingredients

  • 350 g (2 cups) uncooked sushi rice
  • 720 ml (3 cups) cold water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ¼ tsp salt
  • 200 g (7 oz) smoked salmon cut into 2.5cm pieces
  • ½ cucumber seeded and sliced into thin strips
  • 1 large cooked beetroot peeled and shredded
  • 1 large carrot peeled and sliced into thin strips
  • 150 g (1 cup) cooked edamame beans
  • 4 radishes thinly sliced
  • 2 sheets nori seaweed cut into 1cm strips or small triangles
  • 30 g (1 oz) pickled sushi ginger
  • 1 tsp mixed black and white sesame seeds
  • 1 tsp shichimi togarashi

Soy sauce and ginger dressing:

  • 1 tbsp sesame oil
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tsp minced fresh ginger
  • 1 clove garlic peeled and minced
  • pinch of freshly ground black pepper

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Place it in a saucepan and add the specified amount of cold water. Bring the water to a boil, then immediately cover the pan, reduce the heat to low, and cook for 10 minutes. After 10 minutes, turn off the heat and leave the rice, still covered, for an additional 30 minutes to steam and become tender.
  2. Once the rice has rested for 30 minutes, remove the lid and allow the rice to cool slightly to room temperature. In a small bowl, whisk together the rice vinegar, sugar, and salt until the sugar and salt are dissolved. Gently fold this mixture into the cooled sushi rice, ensuring it’s evenly distributed without mashing the grains.
  3. Prepare the dressing by combining all the dressing ingredients (sesame oil, olive oil, soy sauce, minced fresh ginger, minced garlic, and a pinch of freshly ground black pepper) in a small bowl. Whisk vigorously until all ingredients are thoroughly blended into a smooth, aromatic dressing.
  4. To assemble the bowls, divide the seasoned sushi rice equally among four serving bowls. Artfully arrange the smoked salmon pieces, cucumber strips, shredded beetroot, carrot strips, edamame beans, and radish slices over the rice in each bowl.
  5. Carefully add a few nori seaweed strips to each bowl; reserve the remaining strips to add just before serving for maximum crispness. Place a few slices of pickled sushi ginger in each bowl for its distinct tangy flavor. Finally, sprinkle generously with mixed black and white sesame seeds and a pinch of shichimi togarashi, if desired.
  6. Serve your delicious Salmon Sushi Bowls immediately with the prepared dressing on the side or drizzled over, and offer extra nori strips for guests to add as they please. Enjoy this vibrant and flavorful meal!
