Ingredients

The Chilli:

  • 500 g (1.1 lbs) braising beef cut into 2cm cubes
  • 500 g (1.1 lbs) pork shoulder cut into 2cm cubes
  • 3 tbsp plain (all-purpose) flour
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp oil
  • 1 large onion peeled and chopped
  • 3 cloves garlic peeled and minced
  • 1 tsp ground coriander
  • 1 tsp mixed herbs
  • 1 tsp smoked paprika
  • 2 tsp cumin
  • 1 tsp ground ginger
  • 1 tsp hot chilli powder
  • 1 tsp chipotle paste
  • 1 chopped fresh chilli more if you like it hotter (I use fresno chillies)
  • 2 tbsp tomato puree (paste in the USA)
  • 2 tbsp Worcestershire sauce
  • 300 ml (1 1/4 cups) beef stock
  • 2 x 400 g (2 x 14 oz) tinned finely chopped tomatoes (I like Mutti Polpa variety)
  • 2 chunks dark chocolate
  • 2 tbsp fresh coriander/cilantro chopped
  • 400 g (14 oz) can kidney beans drained and rinsed
  • 420 g (15 oz) can mixed beans in tomato or chilli sauce (or you can use mixed beans in water, then drain and rinse before adding)

Serve with (choose your favourites!):

  • boiled rice or tortilla chips
  • 1 freshly chopped coriander (cilantro)
  • sour cream
  • chopped fresh chillies
  • thin slices of red onion
  • grated strong cheddar cheese

Instructions 

  • Begin by preparing your meats. Place the beef and pork chunks in a large bowl. Sprinkle the plain flour, salt, and black pepper over the meat, then toss thoroughly to ensure each piece is evenly coated. This step helps create a delicious crust and thickens the sauce later.
    500 g (1.1 lbs) braising beef, 500 g (1.1 lbs) pork shoulder, 3 tbsp plain (all-purpose) flour, 1/4 tsp salt, 1/4 tsp black pepper
  • Heat the oil in a large frying pan or skillet over high heat. For maximum convenience, if your slow cooker has a searing function, heat the oil directly in the slow cooker on its searing setting. This allows you to perform all frying steps in one pot, minimizing dishes.

  • Carefully add the flour-coated pork and beef to the hot pan or slow cooker. Cook for 5-10 minutes, stirring occasionally, until all sides of the meat are beautifully browned. This browning step is crucial for developing deep, rich flavors.
  • Next, add the chopped onion to the pan. Reduce the heat to medium-high and cook for about 5 minutes, stirring frequently, until the onion has softened and turned translucent.

  • Stir in the minced garlic and continue to cook for just one more minute until fragrant. Be careful not to burn the garlic, as it can turn bitter.

  • Now, it’s time for the spices! Add the ground coriander, mixed herbs, smoked paprika, cumin, ground ginger, hot chilli powder, chipotle paste, fresh chopped chilli, tomato puree, and Worcestershire sauce. Stir everything well to coat the meat and vegetables, and cook for another 2 minutes, allowing the spices to toast and release their full aroma.
    1 tsp ground coriander, 1 tsp mixed herbs, 1 tsp smoked paprika, 2 tsp cumin, 1 tsp ground ginger, 1 tsp hot chilli powder, 1 tsp chipotle paste, 1 chopped fresh chilli, 2 tbsp tomato puree, 2 tbsp Worcestershire sauce
  • Pour in the beef stock and the tinned finely chopped tomatoes. Bring the mixture to a gentle boil on the stovetop. Once boiling, carefully transfer all contents to your slow cooker (crockpot). Cover and cook on the high setting for 5-6 hours, or on the low setting for 6-7 hours, until the meat is incredibly tender and easily falls apart.
    2 x 400 g (2 x 14 oz) tinned finely chopped tomatoes, 300 ml (1 1/4 cups) beef stock
  • Approximately forty-five minutes before the chilli is finished cooking, add the dark chocolate chunks, fresh coriander, drained and rinsed kidney beans, and the mixed beans (drained and rinsed if not in sauce). Stir gently to combine all ingredients. Allow the chilli to continue simmering in the slow cooker for the remaining 45 minutes, letting the flavors meld and the sauce thicken beautifully.

This recipe is ideally cooked in a large (5.6 litre/6-quart) slow cooker. For ultimate convenience and flavor development, utilize the searing function if your slow cooker has one, allowing you to brown the meat and sauté aromatics directly in the pot. This significantly cuts down on cleanup! My preferred slow cooker is linked here.
Oven Cooking Alternative
No slow cooker? No problem! You can easily adapt this recipe for oven cooking. Follow the same initial steps for browning the meat and sautéing the vegetables on the stovetop. Instead of transferring to a slow cooker, place all ingredients into a sturdy casserole pan with a lid. Cook in a preheated oven at 160°C (325°F) for 3-4 hours, or until the beef and pork are incredibly tender. Remember to check occasionally and add a splash of boiling water if the sauce appears to be drying out.
Make Ahead & Refrigeration
This chilli is fantastic for making ahead. Once cooked and cooled completely, cover it tightly and refrigerate for up to 3 days. To reheat, simply transfer to a pan and gently warm over a medium heat, stirring occasionally, until it’s piping hot throughout. The flavors often deepen overnight, making it even more delicious!
Freezing Instructions
For long-term storage, this slow cooker chilli freezes beautifully. After cooking, allow the chilli to cool completely. Divide it into freezer-safe containers or bags, ensuring enough headspace for expansion. Freeze for up to 3 months. When ready to enjoy, thaw overnight in the refrigerator, then reheat following the make-ahead instructions above. It’s perfect for convenient weeknight meals.
Adjusting Recipe Servings
This recipe is designed for a large (5.6 litre/6-quart) slow cooker and yields 6-8 generous servings, making it ideal for families or for batch cooking and freezing. If you wish to halve the recipe to serve 4 people, simply reduce all ingredients by half. The cooking time in the slow cooker will remain approximately the same, as the key is to allow the meat sufficient time to tenderize and flavors to develop.
