The result is this magnificent deep-dish apple pie, generously filled with abundant layers of perfectly cooked apples and a symphony of warming winter spices. The carefully chosen blend of apples guarantees a truly sweet and tangy experience, complemented by just enough luscious sauce to make it wonderfully juicy, without any hint of that dreaded soggy bottom. When it comes to serving apple pie, the debate is as classic as the dessert itself. Do you prefer your homemade apple pie with rich, creamy custard, a melting scoop of vanilla ice cream, or perhaps the simple elegance of good old double cream (heavy cream)? Or maybe, just maybe, you appreciate this timeless treat on its own.
My own family is delightfully divided on the matter! I find pure bliss with a generous pour of warm custard, while Chris, my partner, is a staunch advocate for a scoop of cold, velvety ice cream. It’s the absolute perfect finale after a hearty Sunday roast dinner or any special gathering. Prepare for the “oohs and aahs” of delight as you bring this golden-crusted masterpiece to the table. 🍏 Essential Ingredients for Your Best Apple Pie

Creating the perfect deep dish apple pie starts with selecting the right ingredients. Here’s a breakdown of what you’ll need, along with tips for best results:
- Apples*: The star of the show! A mix of cooking and eating apples provides the ideal balance of flavor and texture.
- Pastry: For convenience and consistent results, I often opt for ready-rolled shortcrust pastry sheets. However, if you enjoy the art of pastry making, feel free to use your favorite homemade shortcrust recipe. A good pastry is key to a flaky crust!
- Sugar: Soft brown sugar is used in the filling to provide a deep, caramelly sweetness that complements the apples and spices beautifully. For the topping, coarse sugar adds a delightful crunch and sparkle to the golden crust.
- Cornflour (Cornstarch): This is your secret weapon against a soggy bottom! Cornflour helps to thicken the juices released by the apples during baking, creating a luscious, saucy filling that holds its shape without making the pastry base wet.
- Spices: A comforting blend of ground cinnamon, ground ginger, and a pinch of ground cloves creates that signature warming winter spice profile. These spices are carefully chosen to enhance the natural sweetness of the apples.
- Lemon Juice: Essential for preventing your sliced apples from browning, it also adds a subtle tangy note that brightens the entire filling.
- Vanilla Extract: A splash of vanilla adds another layer of aromatic depth to the apple filling, complementing the spices.
- Egg (for egg wash): A lightly whisked egg, brushed over the pastry before baking, gives your pie that beautiful golden-brown, shiny finish.
*A Note on Apple Selection: The Heart of Your Apple Pie
Choosing the right apples is paramount for the best deep dish apple pie. The goal is a combination that offers both sweetness and a pleasant tartness, and crucially, apples that have similar cooking times to ensure they soften evenly without some turning to mush while others remain firm.
I highly recommend using a mix of Bramley apples (known for their tartness and ability to break down slightly to create a sauce) and sweeter varieties like Jazz apples or Pink Lady apples. This pairing creates a perfectly balanced filling. Alternatively, if Bramleys are unavailable, Granny Smith apples can provide the necessary tartness. If you prefer a simpler approach, using only Bramley apples works wonderfully for a classic, slightly tangier pie. Ensure all apples are peeled, cored, and sliced to a uniform thickness (around ½ cm) for even cooking.

🥧 How to Make the Perfect Deep Dish Apple Pie
Making a deep dish apple pie might seem daunting, but with these clear steps and helpful tips, you’ll find it incredibly rewarding. The full recipe with detailed steps, including precise measurements, is available in the comprehensive recipe card at the end of this post.
- Prepare Your Pie Dish and Pastry: Begin by preheating your oven and carefully lining your deep pie dish with rolled-out shortcrust pastry. Use two rolls to ensure full coverage for a deep dish, gently pressing the edges together where they meet. Once lined, place the dish in the refrigerator to chill. This crucial step helps prevent the pastry from shrinking during baking, ensuring a perfectly shaped pie.
- Craft the Apple Filling: In a large mixing bowl, combine your freshly sliced apples with a generous drizzle of lemon juice. This isn’t just for flavor; it’s essential for preventing the apples from browning. Next, evenly coat the apples with a blend of plain flour, cornflour (cornstarch), cinnamon, ground ginger, and cloves. The flour and cornflour mixture is key to achieving that perfectly thick, saucy filling that won’t make your bottom crust soggy.
- Sweeten and Arrange: Gently stir in the soft brown sugar and vanilla extract until all the apples are glistening. Now, carefully arrange the apple slices into your chilled, pastry-lined tin. Don’t just dump them in; take the time to pack them in tightly and pile them high. Apples will shrink during cooking, so starting with a generous mound ensures a full, satisfying pie. Trim any excess pastry from the edges of the dish.
- Create the Lattice Top: Brush the edge of your pie’s base pastry with a lightly whisked egg wash. Unroll your third sheet of pastry and slice it into even strips, about 1.5-2cm wide. Begin weaving these strips into a beautiful lattice pattern over the mounded apple filling. This lattice isn’t just decorative; it allows steam to escape, further contributing to a crisp crust. Once the lattice is complete, trim any overhang.
- Bake to Golden Perfection: Brush the entire lattice top with the remaining egg wash and sprinkle generously with coarse brown sugar for a glistening finish and added crunch. Bake for 55-60 minutes in your preheated oven, or until the pastry achieves a rich, deep golden-brown hue and the filling is bubbly and fragrant. If the crust starts to brown too quickly, loosely tent it with foil to prevent over-browning.
👩🍳PRO TIP for a Flawless Deep Dish Apple Pie: Don’t underestimate the power of lemon juice; it’s vital for keeping your apples vibrant and fresh-looking. Consistency is key when slicing your apples – aim for uniform sizes to ensure they cook evenly. Most importantly, pack those apples into the pie dish generously and pile them high! They will naturally condense and soften during baking, so starting with a bountiful filling guarantees a robust and satisfying deep dish pie. A well-packed pie minimizes gaps and creates that luxurious, full filling everyone loves.
For me, this deep dish apple pie truly encapsulates the essence of autumn on a plate. It emerges from the oven so beautiful and inviting, I almost don’t want to cut into it. But the aroma… the aroma always wins!
🍽️ What to Serve Your Deep Dish Apple Pie With
The perfect accompaniment can elevate your deep dish apple pie from delicious to utterly divine. Here are some classic and delightful serving suggestions:
- Homemade Custard: A warm, velvety, and rich homemade custard is a timeless pairing that perfectly complements the sweet-tangy apples and flaky crust. The creamy texture and comforting warmth are simply irresistible.
- Vanilla Ice Cream: A scoop of cold, melting vanilla ice cream creates a wonderful contrast with the warm pie. The rich creaminess and simple vanilla flavor allow the apple pie’s flavors to truly shine. For an adventurous twist, you could even try my homemade Cereal Milk Ice Cream!
- Extra Thick Double Cream: For a simpler, yet equally luxurious option, a dollop of extra thick double cream provides a rich, decadent counterpoint to the pie. Its mild flavor allows the apple and spice notes to remain the star.
- Caramel Sauce: A drizzle of warm caramel sauce can add an extra layer of indulgence, enhancing the brown sugar notes in the filling.
- A Sprinkle of Cinnamon: For a minimalist approach, a light dusting of cinnamon on top of your chosen accompaniment adds an extra touch of warmth and aroma.

Imagine bringing this magnificent deep dish apple pie to the table on a cold, windy Sunday afternoon. The aroma alone will bring smiles all around, as well as a lovely warm glow to your cheeks and a truly happy tummy, especially when accompanied by lashings of warm, homemade custard. It’s the ultimate comfort food experience.
So, what will be your choice for serving this incredible dessert? Will it be classic custard, cool ice cream, or will you be a rebel and indulge in both? No matter your choice, this pie is sure to be a showstopper!
🙋 Frequently Asked Questions About Deep Dish Apple Pie
For the perfect balance of tanginess and sweetness, I highly recommend using a mixture of Bramley cooking apples and Jazz or Pink Lady eating apples. Bramleys break down beautifully to create a luscious sauce, while the sweeter varieties maintain some texture. Crucially, these varieties also have similar cooking times, ensuring all your apple slices soften evenly without becoming mushy or staying too firm.
Absolutely! This apple pie reheats wonderfully in the oven. To prevent a soggy crust, avoid using a microwave for reheating. Simply warm it gently in a moderate oven until heated through. Serving the pie cooled or just warm is also a fantastic option; allowing the pie to cool completely allows the apple filling’s sauce to thicken further, which means your apple pie slices will hold their shape beautifully when served.
Gaps in your apple pie are usually a sign that the apples weren’t packed tightly enough or that they shrunk significantly during baking. To prevent this, make sure to carefully arrange and pack your apple slices into the pie dish, piling them high. Apples naturally reduce in volume as they cook and release moisture. Using apple varieties with similar cooking times also helps, as uneven cooking can lead to some apples collapsing more than others. Start with a truly generous mound of apples!
Avoiding a soggy bottom is a top priority for any apple pie enthusiast! We employ a few key strategies here. Firstly, cornflour (cornstarch) is crucial for thickening the apple juices that escape during cooking, preventing them from soaking into the bottom pastry. Secondly, using a lattice pattern for the top crust is beneficial as it allows ample steam to escape from the filling. This release of steam helps keep both the top and bottom crusts wonderfully crisp and flaky.
If you notice your pie crust is browning too rapidly during baking, especially after the first 30 minutes, simply cover the pie loosely with a piece of aluminum foil. This acts as a shield, protecting the crust from direct heat and allowing the filling to continue cooking without the pastry becoming over-browned or burnt. Continue baking for the full recommended time, checking periodically.

📋 Deep Dish Apple Pie Recipe
30 minutes
1 hour
1 hour 30 minutes
12 servings
Ingredients
- 3 x 320g (3x 11.2 oz) rolls shortcrust pastry
- 5 large cooking apples
- 3 sweet eating apples such as Jazz or pink lady
- 2 tbsp lemon juice
- 3 tbsp plain (all-purpose) flour
- 1 tbsp cornflour (cornstarch)
- 1 tsp ground cinnamon
- ¼ tsp ground ginger
- pinch ground cloves
- 150 g (3/4 cup) light brown sugar
- 1 tsp vanilla extract
- 1 small egg lightly whisked
Topping:
- 1 tbsp coarse brown sugar
Instructions
-
Preheat the oven to 190°C/375°F (fan).
-
Unroll two of the rolls of pastry. Line a deep pie dish (mine is 24cm diameter by 5.5cm deep) with the pastry. Don’t worry about there being a line where the two pieces of pastry meet – just squish them together gently to form a seamless base. You should have some pastry left over; save this for the decorative top of the pie.3 x 320g (3x 11.2 oz) rolls shortcrust pastry
-
Place the pastry-lined dish in the refrigerator to chill thoroughly while you prepare the filling. This prevents shrinking during baking.
-
Peel, core, and then slice the apples into uniform 1/2cm thick slices. This ensures even cooking.5 large cooking apples, 3 sweet eating apples
-
Place the prepared apples in a large bowl and toss immediately with the lemon juice. This vital step prevents the apple slices from oxidizing and turning brown.2 tbsp lemon juice
-
To the apples, add the plain flour, cornflour (cornstarch), ground cinnamon, ground ginger, and a pinch of ground cloves. Toss everything together until the apples are evenly coated. The flour and cornflour mixture will work its magic during baking to create a wonderfully thick sauce, preventing a soggy bottom.3 tbsp plain (all-purpose) flour, 1 tbsp cornflour (cornstarch), 1 tsp ground cinnamon, ¼ tsp ground ginger, pinch ground cloves
-
Finally, stir in the light brown sugar and vanilla extract until well combined with the spiced apples.150 g (3/4 cup) light brown sugar, 1 tsp vanilla extract
-
Now, it’s time to assemble your deep dish pie. Carefully arrange the apple mixture into the waiting, chilled pastry-lined dish. Take your time to pack the apple slices in tightly and pile them high; this ensures a full and compact filling even after they soften during baking.
-
Use a sharp knife to trim any excess pastry that may be hanging over the edge of the pie dish, leaving a neat border.
-
Brush the exposed edge of the bottom pastry with your lightly whisked egg wash. This will help the top pastry adhere.1 small egg
-
Unroll the third roll of pastry and slice it into long strips, approximately 1.5-2cm wide. Also, slice any leftover pastry from the second roll into shorter strips, which can be used for the edges of your pie lattice.
-
To create the elegant lattice topping, begin by arranging several pastry strips vertically over the apple filling, leaving a consistent ½cm gap between each strip.
-
Fold back every other vertical strip you’ve just laid. Now, place a horizontal strip of pastry across the top of the pie, nestling it against the folded strips. Carefully fold the vertical strips back into place, creating a beautiful woven effect.
-
Repeat this process. For the next horizontal strip, fold back the alternate set of vertical strips (those that weren’t folded back previously). Layer another horizontal strip of pastry on top, again leaving a ½cm gap between this new strip and the previous one. Then, place the folded back pastry strips back into position.
-
Continue this weaving technique, alternating which vertical strips you fold back, until the entire pie filling is covered with your intricate lattice.
-
Once the lattice is complete, use a knife to carefully trim off any pastry overhang from the edges, creating a neat finish.
-
Brush all exposed pastry, including the lattice and edges, with the remaining egg wash. This will give it that gorgeous golden sheen.
-
Liberally sprinkle the coarse brown sugar over the top of the pie. This adds a delightful crunch and sparkle to the finished crust.1 tbsp coarse brown sugar
-
Place the pie in your preheated oven and bake for 55-60 minutes, or until the pastry is a beautiful deep golden brown and the filling is bubbling invitingly. If, during the first 30 minutes, you notice the crust is browning too quickly, loosely place a piece of foil over the pie to prevent it from burning. If covering with foil, ensure you cook for the full 60 minutes.
-
Once baked, remove the deep dish apple pie from the oven and allow it to cool for at least 15 minutes before slicing and serving. This resting time allows the filling to set slightly, making for cleaner slices and a more enjoyable texture.
