Fry the potatoes, turning them often with a spatula or tongs, until they are very lightly browned on all sides. This initial frying should take approximately 5 minutes.

Crispy Garlic Sautéed Potatoes Recipe

Ingredients
- 120 ml (1/2 cup) high smoke point, neutral oil (e.g., avocado oil, sunflower, or canola)
- 3 medium floury potatoes (approx. 700g or 1.5lbs), such as Maris Piper – peeled and chopped into 1-inch chunks
- ½ tsp salt
- ½ tsp ground black pepper
- 1 fat clove of garlic, peeled and minced
Instructions
- Place the cubed potatoes in a pan of cold water. Bring to a boil and simmer for 5 minutes.
- Turn off the heat and carefully drain all the water. Give the pan a good shake to ‘fluff up’ the potatoes slightly. This creates more surface area for crispiness.
- Heat the oil over a high heat in a large frying pan until shimmering.
- Add the fluffed potatoes to the hot oil in a single layer. Cook on high heat, turning often, until they are very lightly browned. This should take about 5 minutes.
- Then, sprinkle on the salt and pepper. Continue to cook, turning often, for a further 5-10 minutes, until the potatoes are beautifully golden brown and crispy.
- Turn off the heat and let the pan cool for about 30 seconds. This prevents the garlic from burning.
- Add the minced garlic to the pan. Stir everything together to infuse the garlic flavor into the hot potatoes.
- Remove from the heat and serve immediately, perhaps with an extra sprinkle of flaky salt.
Notes
Can I make them ahead?
They taste best when cooked and eaten right away. However, you can partially prepare them ahead. Cook them until they are lightly browned (the end of step 3 – before you add the seasoning). Then, cool, cover, and refrigerate for up to one day. Discard any excess oil from the pan.
When you’re ready to finish cooking them, heat about 60ml (1/4 cup) of fresh oil in a large frying pan and add the partially cooked potatoes back in. Continue with the recipe from step 4.
If you want to make the whole recipe ahead, or if you have leftovers, then cool, cover, and refrigerate. Take them out of the refrigerator about 30 minutes before you want to reheat them to allow them to come to room temperature. Reheat them in the oven at 180°C/350°F, spread in a single layer on a baking tray, for about 10 minutes. If you’re concerned about them getting too brown, you can cover them with foil for the first 5 minutes, then remove the cover for the final 5 minutes to crisp them up.
Can I freeze them?
While they are best fresh, you can make and freeze them. Cook the potatoes fully, then allow them to cool completely. Freeze them in a single layer on a baking sheet, then transfer to a freezer-safe bag or container. Defrost in the refrigerator overnight. Before reheating, take them out of the refrigerator about 30 minutes in advance to take off the chill. Reheat in the oven as per the ‘make ahead’ instructions above.
