Navigating the Return to Routine: Embracing Speedy Supper Solutions

The transition from sun-drenched summer days to the structured rhythm of school and work can be abrupt. One morning, the realisation hits with a jolt: the kids are back at school next week! Where did the long, lazy summer holidays go? My mind conjures images of endless sunny afternoons, children playing freely in the garden, their joyful shouts filling the air as they chased each other on bikes, scored imaginary goals in football, or embarked on secret spy missions—a particular favourite of Lewis’s.

Looking back, we certainly packed a lot in: a memorable couple of weeks exploring Florida’s wonders, a refreshing week for the children in the beautiful Welsh countryside, countless sleepovers with cherished friends and family, and an unforgettable foodie weekend at the Big Feastival. Yet, despite all these wonderful memories, there’s always a part of me that yearns for more summer adventures.

Today, we embark on one last hurrah – a picnic and a invigorating walk up Bosley Cloud, which I affectionately call a mountain, though it’s more accurately a magnificent big hill, alongside dear friends. After that, the diary stands clear, marking a definite end to impromptu plans and a full return to a more conventional routine.

Wednesday signals the shift back to a more normal work schedule, albeit one punctuated by the sometimes annoying, often utterly charming distractions that only children can provide – like Gracey’s delightful homemade pies served just yesterday, crafted from blackberries she meticulously picked in the garden. This return to routine also means a shift back to more regular meals, or at least as ‘normal’ as meals can get for a food blogger constantly seeking inspiration!

In these demanding school-and-work days, we often need a culinary helping hand. While I’m passionate about cooking from scratch, I’m certainly not opposed to incorporating truly high-quality, ready-made ingredients into my repertoire. And that brings me to a seamless introduction to The Saucy Fish Co., a brand that consistently delivers on both convenience and taste.

The Saucy Fish Co.: Elevating Everyday Seafood

I am a genuine admirer and regular purchaser of The Saucy Fish Co. products, and for good reason. They’ve mastered the art of creating delicious, sauce-filled fishcakes where the sauce remains perfectly contained during cooking – a testament to their quality. Beyond fishcakes, their range of frozen fish, designed to be cooked straight from the freezer in the oven, served with an array of vibrant sauces, is equally impressive. My personal favourites include the succulent Salmon with Chilli, Lime, and Ginger Dressing, and the exquisite Sea Bass with Salsa Verde, both of which transform a simple meal into a gourmet experience.

Initially, I approached their fish-cooked-from-frozen range with a touch of skepticism when I first encountered it earlier this year. However, any hesitation quickly vanished; these products are absolutely fabulous! Each portion is prepared within a special oven bag, ensuring the fish emerges from the oven consistently tender, juicy, and flaky – a stark contrast to many other frozen fish options I’ve tried, which often turn out dry and bland. The Saucy Fish Co. truly sets a benchmark for quality and convenience in the frozen seafood market, making it an indispensable ally for creating quick, delicious, and healthy meals.

I was delighted when the brand sent me not one, but two exciting boxes of goodies. The first was generously filled with an assortment of their delectable fish and fishcakes (a definite win!). The second box contained a fantastic kit to create a homemade outdoor bowling game, complete with glow-sticks for evening play! This was exactly the kind of fun activity we’d been searching for to make our summer holidays even more memorable. The game was brilliantly designed by Katie Pix, whose creative, vibrant energy you can check out online—she’s absolutely bonkers in the best way!

Yesterday, I even shared some Instagram stories of my attempts at the bowling game. Let’s just say my bowling skills were… well, embarrassing! But the laughter and fun it brought were priceless, perfectly encapsulating the spirit of easy, joyful moments that products like The Saucy Fish Co. help to facilitate, by giving us more time to enjoy life’s simple pleasures.

Crafting a Wholesome and Delectable Meal

Now, let’s dive into the heart of this post: the recipe. While the Saucy Fish Co. fishcakes themselves are the effortless star of the show, I decided to elevate them with a thoughtfully chosen supporting cast. Inspired by some of the more elaborate and delightful meals we enjoyed during our Florida vacation, I opted to serve them with creamy cheesy mash, succulent crispy garlic butter prawns, and fresh green beans. This combination not only adds layers of flavour and texture but also transforms a simple fishcake dinner into a truly satisfying and memorable meal.

For those looking for an alternative pairing, these fishcakes also pair wonderfully with a refreshing bacon and pea salad, offering a lighter yet equally flavourful option.

These Saucy Fish Co. Fishcakes with Cheesy Mash and Crispy Garlic Prawns make a fantastic weeknight dinner when you’re short on time but refuse to compromise on flavour and quality!

Prep Time: 10 mins

Cook Time: 20 mins

Total Time: 30 mins

Servings: 2 servings

Course: Dinner

Cuisine: British

Ingredients

  • 2 smoked haddock and vintage cheddar fishcakes
  • 2 medium red-skinned potatoes, peeled and chopped into bite-size chunks
  • 2 tbsp unsalted butter (for mash)
  • 3 tbsp double/heavy cream
  • 50 g (1/2 cup) mature cheddar cheese, grated
  • 12 king prawns (shrimp), peeled and de-veined
  • 2 tbsp plain (all-purpose) flour
  • ½ tsp garlic salt
  • Pinch salt and pepper (to taste)
  • 1 tbsp vegetable/sunflower oil
  • 1 tbsp unsalted butter (for prawns)
  • 1 clove garlic, peeled and minced

To Serve:

  • Steamed green beans
  • 1 tbsp freshly chopped parsley
  • Freshly ground black pepper

Instructions

  1. Prepare the Fishcakes: Preheat your oven according to the instructions on your Saucy Fish Co. smoked haddock and vintage cheddar fishcakes packaging. Cook the fishcakes as directed, ensuring they are golden and piping hot.
  2. Make the Cheesy Mash: While the fishcakes are cooking, place the chopped potatoes in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for 10-12 minutes, or until the potatoes are tender when pierced with a fork. Drain the potatoes thoroughly. Mash them using a potato masher or ricer until smooth. Stir in the 2 tablespoons of unsalted butter, double/heavy cream, grated mature cheddar cheese, and a generous pinch of salt and pepper. Cover the pan with a lid to keep the mash warm while you prepare the remaining elements of the meal.
  3. Prepare the Crispy Garlic Prawns: Place the peeled and de-veined king prawns on a plate. Sprinkle them with the plain flour, garlic salt, and additional salt and pepper. Toss the prawns gently to ensure they are evenly coated with the seasoned flour.
  4. Cook the Prawns: Heat the vegetable/sunflower oil and 1 tablespoon of unsalted butter in a frying pan over a medium-to-high heat. Once the butter has melted and is sizzling slightly, add the coated prawns to the pan. Cook the prawns for approximately 2-3 minutes on each side, or until they turn golden brown and are cooked through. Reduce the heat significantly and stir in the minced garlic for about 30 seconds, allowing the garlic to become fragrant without burning. Immediately turn off the heat.
  5. Assemble the Dish: Divide the warm cheesy mashed potato evenly between two serving plates. For a neat presentation, you can use a cooking ring to shape the mash into a disc. Carefully place one cooked fishcake on top of or alongside each portion of mashed potato. Arrange the crispy garlic prawns around the fishcakes on the plate.
  6. Garnish and Serve: Serve your delicious meal immediately with a side of steamed, lightly buttered green beans. Finish by sprinkling freshly chopped parsley and a grind of fresh black pepper over the entire dish for an added burst of flavour and visual appeal.

Why This Recipe is a Weeknight Game-Changer

This Saucy Fish Co. Fishcakes recipe is more than just a quick meal; it’s a testament to how convenience and gourmet flavours can harmoniously coexist. Here’s why it deserves a spot in your weekly rotation:

  • Unbeatable Speed: With a prep time of just 10 minutes and a cook time of 20 minutes, you can have a restaurant-quality meal on the table in half an hour. This is invaluable for busy parents, professionals, or anyone who values their evening hours.
  • Exceptional Flavour Profile: The smoked haddock and vintage cheddar fishcakes offer a rich, savoury base. The creamy, cheesy mash provides a comforting contrast, while the crispy garlic prawns introduce a delightful textural crunch and an aromatic burst of garlic butter. It’s a symphony of tastes and textures that satisfies every palate.
  • Nutritionally Balanced: Fish is an excellent source of lean protein and essential omega-3 fatty acids, vital for heart and brain health. Potatoes provide complex carbohydrates for sustained energy, and green beans add important vitamins, minerals, and fiber. This meal offers a well-rounded nutritional profile, ensuring you and your family are well-fed and energised.
  • Minimal Cleanup: Utilizing ready-made fishcakes significantly reduces the number of pots and pans, simplifying the cleanup process. More time enjoying your meal, less time scrubbing dishes!
  • Versatile and Adaptable: While this specific pairing is fantastic, the components are versatile. Experiment with different types of Saucy Fish Co. fish or fish fillets. You could swap cheddar for a different cheese in the mash, or try sweet potato mash for a twist. The prawns can be seasoned with different herbs or spices to suit your preference.

Tips for Success and Variations

To ensure your meal is consistently perfect, consider these additional tips:

  • Potato Choice: For the creamiest mash, opt for floury potato varieties like Maris Piper, King Edward, or Russet.
  • Mash Texture: Don’t overwork your mash, as it can become gluey. Mash just enough until smooth, then gently fold in the butter, cream, and cheese.
  • Prawn Crispiness: Ensure your oil and butter are hot enough before adding the prawns. Overcrowding the pan can lower the temperature and lead to steaming rather than crisping. Cook in batches if necessary.
  • Garlic for Prawns: Adding the minced garlic at the very end and cooking for only 30 seconds prevents it from burning, which can turn bitter.
  • Meal Prep Hack: You can prepare the cheesy mash ahead of time. Store it in an airtight container in the refrigerator and gently reheat it on the stovetop or in the microwave with a splash of milk or cream before serving.
  • Vegetable Alternatives: Instead of green beans, consider serving with asparagus, broccoli, or a fresh rocket salad dressed with a simple vinaigrette.
  • Spice It Up: For a touch of heat, add a pinch of chili flakes to the garlic prawns or a dash of hot sauce to your mash.
