Ingredients

  • 1 tbsp oil vegetable or olive oil
  • 450 g chicken thigh fillets, chopped into chunks
  • 10 button mushrooms sliced
  • 3 tbsp dark soy sauce use tamari for gluten free
  • 2 tbsp honey
  • 2 cloves of garlic peeled and minced
  • 1 thumb size piece of ginger peeled and minced
  • ½ tbsp sesame oil
  • ½ tsp mirin usually gluten free, but best to check
  • ½ tsp Chinese rice vinegar usually gluten free, but best to check
  • 100 g mangetout
  • 1 yellow pepper deseeded and sliced
  • 1 red pepper deseeded and sliced
  • 100 g kale, chopped
  • 1 tbsp cornflour/cornstarch mixed with 2 tbsp cold water (optional, for thickening)

Cauliflower egg fried rice:

  • 1 tbsp olive oil
  • 2 large eggs lightly whisked with a fork
  • 1 large or 2 small cauliflower outer leaves removed, grated
  • 1 tbsp dark soy sauce use tamari for gluten free
  • pinch of black pepper

Instructions

  1. Heat the oil in a large wok or a spacious frying pan over medium-high heat. Add the chopped chicken thigh fillets and stir-fry until they are beautifully browned and cooked through. This should take about 5-7 minutes. Next, add the sliced mushrooms to the pan and cook for another minute, allowing them to soften slightly.
  2. In a small bowl, whisk together the dark soy sauce (or tamari), honey, minced garlic, minced ginger, sesame oil, mirin, and Chinese rice vinegar to create the flavorful stir-fry sauce. Pour this sauce over the chicken and mushrooms in the wok. Bring the mixture to a gentle boil and let it simmer for 3-4 minutes, allowing the sauce to thicken slightly and caramelize, coating the chicken beautifully.
  3. While the chicken simmers, prepare the cauliflower egg fried rice. Place another large frying pan or wok on a high heat. Add the olive oil. Once hot, pour in the lightly whisked eggs and quickly scramble them, moving them around the pan until they are just cooked but still soft. Add the grated cauliflower to the pan with the eggs and stir well to combine. Pour in the soy sauce (or tamari) and a pinch of black pepper. If you prefer a thicker sauce and the vegetables have released a lot of liquid, you can stir in the cornflour/cornstarch mixture (pre-mixed with cold water) at this stage. Cook for an additional minute until the sauce reaches your desired consistency.
