The Bowls I Make Every Week
These bowls are a riff on my popular Mediterranean chicken rice bowls, using ground beef for a quick, flavor-packed option. The rice cooks while you prepare everything else, the beef gets depth from harissa and pomegranate molasses, and the salad keeps the dish bright.
They’re easy to customize: add creamy hummus for extra protein, swap the rice for another grain, or switch the protein entirely. They work great for meal prep and never feel boring.

Ingredients You’ll Need

- Ground beef. Lean ground beef (5–10% fat) keeps the bowls from getting greasy. You can also use ground lamb, chicken, turkey, pork, or a plant-based substitute.
- Rice. Long-grain rice (I use basmati) works best with the recipe’s liquid amounts. Swap grains if you like, but adjust liquids and cooking time accordingly.
- Harissa paste. A North African chili paste that adds smoky, slightly sweet heat. Brands vary in spiciness—taste before adding and adjust to preference.
- Tahini. Choose a smooth, pourable tahini for the best texture. Stir well before using to reincorporate any separated oil.
- Flat-leaf parsley. Adds freshness to the green tahini sauce; you can swap other herbs or baby spinach if preferred.
How to Make the Mediterranean Beef Bowls
Below is a visual step-by-step overview; the full ingredient list and measurements are included in the recipe section.

- Toast the spices in oil until fragrant.

- Add the rice and stir to coat the grains.

- Add stock or water, bring to a boil, then simmer covered until fluffy.

- Fluff the rice when cooked and fragrant.

- Blend the green tahini sauce until smooth and creamy.

- Brown the ground beef, then add harissa, spices, and pomegranate molasses.

- Cook the beef until sticky, glossy, and caramelized.

- Assemble bowls with rice, beef, salad, and a generous drizzle of green tahini sauce.
Kate’s Top Recipe Tips
- Taste your harissa first. Heat levels vary—start with less if it seems spicy.
- Let the beef brown properly. Allow time for caramelization to develop deep flavor.
- Adjust the tahini sauce consistency. It will thicken as it rests; thin with a little water if needed.
- Brighten flat flavors. A squeeze of lemon juice lifts the whole bowl.
Make the Bowls Your Own
This recipe is endlessly adaptable:
- Swap the protein for lamb, turkey, chicken, shredded rotisserie chicken, or halloumi for a vegetarian option.
- Use brown rice, quinoa, bulgur, couscous, cauliflower rice, or serve with flatbreads or baked pita chips—adjust liquids and times as needed.
- Mix up the toppings: hummus, pickled onion, lettuce, roasted peppers, avocado, or chili oil are all great additions.
- Try different sauces instead of green tahini: tzatziki, tahini-yogurt, zhoug, whipped feta, or hummus.
Mediterranean Beef Bowl FAQs
Yes. Store the rice, beef, salad, and tahini sauce separately and assemble when ready. Rice, beef, and tahini keep up to 5 days in the fridge; the salad is best within 4 days.
That depends on your harissa. Some brands are hot, others mild. Taste it first and start with 1–2 teaspoons if unsure, then add more to suit your heat tolerance. The other elements help balance any spice.
If you don’t have tahini, try garlic aioli, mayo, tzatziki, whipped feta, or hummus for a creamy, tangy element.
Lean ground beef (around 5% fat) keeps the bowls from getting greasy; 10–15% fat will be juicier if you prefer that.

Ingredients
For the golden rice
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 1/2 cups long-grain rice (like basmati)
- 2 1/2 cups low-sodium chicken stock or water
For the green tahini drizzle
- 1/2 cup tahini
- 1/2 cup flat-leaf parsley leaves
- 2 garlic cloves, peeled
- 3 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/3 cup water (adjust to desired consistency)
For the salad
- 7 oz (200g) cherry tomatoes, chopped
- 1 cucumber, finely chopped
- 1/2 cup pitted olives, chopped
- 2 oz (50g) creamy feta, crumbled
- 1 teaspoon sumac
- Black pepper, to taste
For the sticky ground beef
- 1 lb (500g) lean ground beef (5–10% fat)
- 4 garlic cloves, crushed
- 2 teaspoons ground cumin
- 1 tablespoon smoked paprika
- 1 tablespoon harissa paste (adjust to taste)
- 1 tablespoon pomegranate molasses
- 1/2 teaspoon salt
- Black pepper, to taste
Instructions
- Toast the rice in the spices. Heat a medium saucepan over medium heat. Add 1 tbsp olive oil, then 1 tsp each ground turmeric and cumin. Cook until fragrant (about 1 minute). Add 1 1/2 cups rice and stir to coat. Toast for 2 minutes, stirring often.
- Simmer the golden rice. Add 2 1/2 cups chicken stock or water. Bring to a boil, then reduce to the lowest heat, cover, and cook undisturbed for 15 minutes. Remove from heat and keep covered for 10 minutes, then fluff with a fork.
- Make the green tahini sauce. Blend 1/2 cup tahini, 1/2 cup parsley, 2 garlic cloves, 3 tbsp lemon juice, 1/2 tsp salt, and 1/3 cup water until smooth. Adjust water or tahini to reach a heavy cream-like consistency. Taste and season as needed.
- Make the salad. Toss tomatoes, cucumber, olives, and feta with 1 tsp sumac and a grind of black pepper. Set aside.
- Cook the sticky ground beef. In a large skillet over medium-high heat, add the beef and break it up. Cook 3 minutes until browning begins. Add crushed garlic, 2 tsp cumin, 1 tbsp smoked paprika, 1 tbsp harissa, 1 tbsp pomegranate molasses, and 1/2 tsp salt. Stir to combine.
- Finish the beef. Continue cooking about 7 minutes, stirring occasionally, until the beef is glossy, sticky, and caramelized. Remove from heat.
- Assemble the bowls. Divide rice between bowls, top with the sticky beef, add the salad, and finish with a generous drizzle of green tahini sauce. Serve with flatbread or pita chips if desired.
Notes
Make ahead: Store components separately and assemble when ready. Rice, beef, and tahini keep up to 5 days; salad is best within 4 days.
Substitutions: Swap proteins or sauces as desired. If you use a different grain, follow that grain’s packet instructions for liquid and cooking times.
Tahini tips: Use smooth, runny tahini if possible and stir well before using. If sauce thickens, thin with a little water.
No blender: Finely chop parsley and mash garlic, then whisk together with tahini, lemon juice, and salt. Gradually add water until smooth.
