These turkey lettuce wraps are ideal for a light lunch or a quick dinner. They take around 20 minutes from fridge to table, are high in protein and very satisfying. If you prefer more carbs, stir some cooked rice into the filling before serving.

📋 Ingredients

  1. Heat oil in a hot pan and brown the turkey mince.
  2. Add garlic and chilli and stir‑fry briefly.
  3. Mix in sugar, hoisin, soy sauce, white pepper and water; cook until the turkey is golden and the sauce has combined.
  4. Spoon the mixture into lettuce leaves, add toppings and serve.

Pro Tip

Baby gem (Little Gem) lettuce is ideal because the leaves are small, crunchy and easy to hold. If unavailable, Bibb (butter) lettuce is a good substitute — its leaves are softer but still work well.

I love to serve these for a light dinner or a protein-packed lunch.

Turkey Lettuce Wraps Recipe

Ingredients

  • 2 tablespoons sesame oil
  • 500 g minced (ground) turkey (about 1.1 lbs; I use 7% fat)
  • 2 cloves garlic, peeled and minced
  • 1 red chilli, thinly sliced
  • 2 tablespoons light brown sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon dark soy sauce
  • ¼ teaspoon white pepper
  • 2 tablespoons water

To Serve

  • 12 baby gem lettuce leaves, washed and dried
  • 6 spring onions (scallions), finely sliced
  • 2 teaspoons sesame seeds
  • ½ teaspoon chilli flakes
  • Sweet chilli sauce or sriracha, to taste

Instructions

  • Heat the sesame oil in a frying pan over high heat.
  • Add the minced turkey and fry for about 5 minutes, breaking up any large pieces, until lightly browned.
  • Add the garlic and sliced chilli and fry for another 2 minutes.
  • Stir in the brown sugar, hoisin, dark soy, white pepper and water. Cook for a further 2 minutes until the turkey is golden and the mixture is well combined. Turn off the heat.
  • Divide the filling between the baby gem leaves. Top with spring onions, sesame seeds and chilli flakes. Drizzle sweet chilli sauce or sriracha to taste and serve.

Want to make these wraps more substantial?

If you want more bulk, add rice. Spoon a tablespoon of freshly cooked rice into each lettuce leaf, or add 200 g cooked rice to the pan with the turkey and mix through before assembling.

Yes. Make the filling, cool it quickly, cover and refrigerate for up to two days. Reheat in a pan with a splash of water until piping hot. The filling also freezes well — defrost in the fridge overnight and reheat the same way.
