Cinnamon French Toast Recipe: Crispy, Custardy Morning Toast

This cinnamon-sugar-crusted French toast is a delicious upgrade for breakfast or brunch. Serve it plain, with fruit, or pile on whipped cream and syrup for a decadent treat.

French toast is always comforting, and this version adds a crisp cinnamon-sugar crust for texture and flavour. The key is to cook the slices lightly first, then sprinkle the cinnamon sugar into the pan so it caramelizes against the hot surface. Turn the slice, add sugar to the other side, and let the pan do the rest.

The result is soft, fluffy bread inside with no strong eggy taste, and a sweet, slightly crisp exterior. I keep a jar of cinnamon sugar in the cupboard now so this takes just minutes to make.

Ingredients

Cinnamon Sugar French Toast

  • 2 large eggs
  • 4 tablespoons milk
  • ½ teaspoon vanilla extract
  • 6 tablespoons soft brown sugar
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter
  • 6 thick slices of brioche bread

Serving Suggestions

  • Confectioners’ sugar for dusting
  • Fresh berries, cherries, or banana slices
  • Golden syrup or maple syrup
  • Whipped cream
  • Chopped nuts (hazelnuts, pecans, or walnuts)

Instructions

  • Whisk together the eggs, milk and vanilla extract in a wide, shallow bowl.
  • Mix the brown sugar and cinnamon together on a plate.
  • Heat 2 tablespoons of the butter in a large frying pan over medium heat until just bubbling.
  • Dip three slices of bread in the egg mixture, coating both sides, then place them in the hot pan. Fry 1–2 minutes per side until lightly browned.
  • While the toast is in the pan, sprinkle about 1 tablespoon of the cinnamon sugar on the top, flip the slice, and sprinkle another tablespoon on the other side. Cook for another minute per side until golden and caramelized.
  • Transfer the cooked slices to a warm plate. Add the remaining 2 tablespoons of butter to the pan and repeat with the remaining bread slices.
  • Once all slices are cooked, divide between plates and sprinkle with any remaining cinnamon sugar.
  • Serve plain or with toppings: confectioners’ sugar, fruit, syrup, whipped cream and chopped nuts are all delicious additions.
