French Press Sandwich Bites: Crispy Mini Grilled Sandwiches

These French-pressed sandwich bites — inspired by the pan bagnat — combine three different flavour sections in one loaf. They make eye-catching party food that’s easy to prepare and perfect for gatherings.

You can even make a sweet version — think banana with mascarpone, raspberries, Nutella and figs — or mix savoury and sweet ends in the same loaf for a playful twist. Just be aware the centre slice may mix flavours unexpectedly.

In brief, the method is simple: hollow out a ciabatta, spread the base with cream cheese to protect the bread from moisture, then layer three different flavour sections before replacing the lid and pressing the loaf. Once pressed and chilled, slice into bite-sized squares.

Filling ideas I used

  • Cucumber, smoked salmon, mizuna/rocket leaves and lemon zest
  • Spinach, red onion, roasted pepper and pesto
  • Carrot, radish, hummus and grated beetroot

To assemble, I divided the hollowed loaf base into thirds. On the first third I layered cucumber, then smoked salmon, then mizuna leaves and finished with a little lemon zest. On the second third I layered spinach, red onion, roasted pepper and pesto. On the third I used grated carrot, radish, hummus and grated beetroot.

Replace the ciabatta lid, wrap the loaf in parchment and chill it under a heavy weight for a few hours or overnight. This compresses the layers and makes neat slices. When ready, unwrap, cut into thirds, and then cut each third into a 3-by-3 grid to yield about 27 bite-sized sandwiches. Secure each piece with a cocktail stick if you like.

Make-ahead

You can prepare these up to 2 days ahead if you use a good thick layer of cream cheese and very fresh ciabatta. Wrap well and refrigerate.

Gluten-free option

A thick gluten-free ciabatta equivalent can be hard to find. If using a gluten-free cob or round loaf, you may be better slicing into wedges rather than small bites; this will yield fewer servings but still works well.

Substitute for cream cheese

The cream cheese creates a moisture barrier to prevent soggy bread. You can substitute a thin layer of butter or very thinly sliced cheese if preferred.

French Pressed Sandwich Bites — Ingredients

  • 1 good-quality ciabatta, ideally slightly larger than usual (about 300g)
  • 4 tbsp cream cheese
  • ½ cucumber, peeled into strips with a vegetable peeler
  • 30 g (approx. 2/3 cup packed) baby spinach
  • 1 carrot, peeled and grated
  • 2 slices (about 60 g) smoked salmon
  • ⅛ small red onion, peeled and thinly sliced
  • 2 radishes, thinly sliced
  • 30 g (about 1 cup) mizuna or baby rocket leaves
  • 1 jarred roasted red or yellow pepper, drained and sliced
  • 3 tbsp red pepper hummus
  • Zest of 1 lemon
  • 2 tbsp fresh pesto
  • 1 small cooked beetroot, grated (about 50 g)

Instructions

  1. Slice the top off the ciabatta and hollow out the interior. Save the removed bread for breadcrumbs or another use.
  2. Spread the base of the hollowed loaf with cream cheese to create a moisture barrier.
  3. Divide the base into three sections. Cover one third with cucumber strips, one third with baby spinach and the final third with grated carrot.
  4. Top the cucumber with smoked salmon, the spinach with sliced red onion, and the grated carrot with radish slices.
  5. Add the next layer: top the salmon with mizuna leaves, the red onion with roasted pepper, and the radish with hummus.
  6. Finish the topmost layer: sprinkle lemon zest over the mizuna, spread pesto over the roasted peppers, and grate beetroot over the hummus.
  7. Replace the ciabatta lid, wrap the loaf tightly in baking parchment and refrigerate. Place a baking tray or other flat board on top and add a heavy weight. Chill for a few hours or ideally overnight to press the loaf.
  8. When pressed, unwrap the loaf. Cut it into three equal portions, then cut each third into a 3-by-3 grid to make 27 bite-sized sandwiches.
  9. Arrange on a platter and, if desired, insert cocktail sticks for easy serving.
