Are you a blue cheese fan? I have to admit I wasn’t at first. After many requests for gorgonzola pasta on our YouTube channel, I finally tried it for the recipe — and I’m delighted to say I loved it. The cheese melts into the cream and creates a silky sauce that coats the pasta beautifully without tasting overly sharp.
During testing Chris tried it and encouraged me to taste on camera for our video. I expected to say I didn’t like it, but I was surprised — it’s rich, balanced and really satisfying. I’m a convert!

📋 What do we need?

🧀 Types of Gorgonzola
There are two common styles: Gorgonzola Dolce (sweet, creamy) and Gorgonzola Piccante (aged, stronger). For this sauce Dolce is ideal for its creaminess, but use Piccante if you prefer a bolder, more pungent flavour.

This is a very quick recipe made while the pasta cooks. Gently soften finely chopped shallot in butter, add minced garlic, then stir in double (heavy) cream, crumbled gorgonzola, grated Parmesan, salt, pepper and chopped parsley. Mix until the cheese melts and the sauce is smooth.
Toss the drained pasta into the pan with a splash of the reserved pasta cooking water to loosen the sauce if needed. Stir until the sauce clings to the pasta and serve immediately.

- Reserve a little of the starchy pasta water when draining. Adding a splash helps loosen the sauce while keeping it silky and helps the sauce cling to the pasta.
Finish with extra parsley, a grind of black pepper and a scattering of toasted walnuts for texture and contrast.

🍽️ What can I serve with Gorgonzola sauce?
This creamy gorgonzola sauce works with many dishes beyond penne. Try it with:
- Ravioli, spaghetti or tagliatelle — any long or stuffed pasta
- A sauce for steak
- Drizzled over crispy chips for a decadent lunch
- Served with roast chicken thighs and a fresh green salad

If you want more carbs, bread is a perfect match — it soaks up any leftover sauce beautifully.
Modifications:
This pasta is a complete meal on its own, but you can vary it easily. Try adding crispy bacon lardons or pancetta, fresh peas, lightly steamed asparagus or tender buttered leeks to change the texture and flavour.

Gorgonzola Pasta Recipe

Ingredients
- 400 g (14 oz) penne pasta or your favourite pasta shape
- 2 tbsp unsalted butter
- 1 banana shallot peeled and finely chopped (or 1/2 small onion)
- 2 cloves minced garlic
- 150 ml (1/2 cup + 2 tbsp) double (heavy) cream
- 125 g (4.5 oz) Gorgonzola cheese crumbled or roughly chopped
- 2 tbsp finely grated parmesan
- 3 tbsp chopped fresh parsley
- ⅛ tsp salt
- ¼ tsp black pepper
To Serve:
- 1 tbsp finely grated parmesan
- 1 pinch black pepper
- 1 tbsp chopped fresh parsley
- 2 tbsp chopped toasted walnuts (dry-fry in a pan for 1–2 minutes until lightly browned)
Instructions

Cook the pasta in boiling salted water according to package directions until al dente.

Meanwhile, melt the butter in a large frying pan over medium heat. Add the chopped shallot and cook for 3–4 minutes until softened.

Add the minced garlic and cook for 1 minute more.

Stir in the cream, gorgonzola, parmesan, parsley, salt and pepper. Cook and stir until the gorgonzola has melted and the sauce is smooth.

When the pasta is ready, drain it, reserving about 1/2 cup of the cooking water.

Add the drained pasta to the pan with the cream sauce and toss to combine. Add a splash of the reserved pasta water to loosen the sauce if needed.

Divide between plates and top with extra parmesan, black pepper, chopped parsley and toasted walnuts. Serve immediately.
