Crispy Air Fryer Teriyaki Salmon Recipe in 20 Minutes

Air fryer teriyaki salmon cut into bite-size pieces and served over fluffy boiled rice makes a light, satisfying dinner. It needs just 10 minutes to marinate and about 6–7 minutes in the air fryer.

This Air Fryer Teriyaki Salmon is easy, fast and full of flavour. Tender salmon bites glazed in a sweet, sticky teriyaki sauce make it irresistible. The method is simple and uses minimal equipment, making cleanup quick.

πŸ“‹ Ingredients

Salmon – use skinless fillets. Ask your fishmonger to cut them into chunks or trim and cube them at home.

Oil – a neutral oil works well; avocado oil is a good option.

Dry sherry – adds depth to the sauce. If you don’t have it, replace with an extra 1/2 tbsp mirin.

  1. Whisk the light and dark soy sauces with the cornflour (cornstarch) until smooth, then add the remaining sauce ingredients and mix.
  2. Put 2 tbsp of the sauce in a bowl with the salmon pieces, toss to coat and leave to marinate for 10 minutes.
  3. Arrange the salmon in a single layer in the air fryer basket, drizzle with a little oil and air fry at 200Β°C / 400Β°F for 6–7 minutes.
  4. Heat the remaining sauce in a microwave-safe bowl or in a small saucepan until thick and bubbling.
  5. Serve the salmon over rice, drizzle with teriyaki sauce and garnish as desired.

πŸ‘©β€πŸ³PRO TIP Use a liner or a well-oiled basket to help prevent the salmon bites from sticking.

🍽️ What to serve it with

  • Boiled rice, egg fried rice or stir-fried noodles
  • Sweet chilli sauce or bang bang sauce as an optional condiment
  • Steamed green vegetables such as broccoli or green beans

Sprinkling chilli flakes over the finished dish gives it a pleasant kick.

Bite-size teriyaki salmon over fluffy rice makes a light, flavourful dinner.

Ingredients

Teriyaki Sauce:

  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tsp cornflour (cornstarch)
  • Β½ tbsp sake or dry sherry
  • 3 tbsp mirin
  • 1 tsp sesame oil
  • 2 tbsp brown sugar
  • 1 tsp minced ginger
  • 2 garlic cloves, peeled and minced
  • Β½ tsp white pepper

Salmon:

  • 4 salmon fillets (approx. 480g / 17oz total), skin removed and cut into 2.5cm / 1″ chunks
  • 1 tbsp oil

To serve (optional):

  • Boiled rice
  • Spring onions, finely sliced
  • Sesame seeds
  • Chilli flakes
  • Steamed green vegetables (broccoli or green beans)
  • Sriracha mayo (3 tbsp mayonnaise + 1 tbsp sriracha)

Instructions

  • Make the sauce: Combine light and dark soy sauces with the cornflour until dissolved. Add sake (or sherry), mirin, sesame oil, brown sugar, ginger, garlic and white pepper. Mix well.
  • Marinate the salmon: Place the salmon pieces in a bowl, add 2 tbsp of the teriyaki sauce, toss to coat and cover. Marinate for 10 minutes.
  • Air fry: Arrange salmon in a single layer in the air fryer basket, drizzle with oil and cook at 200Β°C / 400Β°F for 6–7 minutes, until cooked through and slightly caramelised.
  • Heat the sauce: Warm the remaining teriyaki sauce in a microwave-safe bowl (about 2 minutes, stirring halfway) or in a small saucepan over medium heat until bubbling.
  • Finish and serve: Carefully remove salmon from the basket with a spatula. Serve over bowls of boiled rice, drizzle with teriyaki sauce and top with spring onions, sesame seeds and chilli flakes. Serve with steamed greens and a drizzle of sriracha mayo if you like.

Notes

Can I make it ahead?

Cooked salmon tends to dry out when reheated, so I don’t recommend cooking it in advance. You can, however, prepare the salmon cubes and make the sauce ahead of time, then cook the salmon and reheat the sauce when ready to serve.

Leftovers cool quickly and can be chilled for up to a day; cold salmon pieces work well in salads the next day.

Scaling

Double the recipe for a crowd or halve it for two people, keeping ingredient ratios the same.
