Frozen Pink Grapefruit Prosecco Cocktail – a pretty, cooling drink to kick off spring!
March has arrived and, with a hint of sunshine in the air, I’m celebrating with frozen cocktails. They’re bright, refreshing and perfect for welcoming the lighter days.
My inspiration came from a quick sorbet Chris made — just blitzed frozen berries — and I realised a blender, ice and a splash of booze could produce something much more interesting.
That idea turned into a few glasses of a prosecco-and-vodka frozen cocktail: fruity, fizzy and so easy to make. It’s the sort of drink that feels playful yet grown-up — a slushie for adults.

I haven’t been strict with healthy eating this week; deadlines and lots of work have thrown my plans off course. I keep promising to start again tomorrow, but with a birthday coming up I’m allowing myself extra chocolate and cocktails for now.

The Frozen Pink Grapefruit Prosecco Cocktail Recipe:

Frozen Pink Grapefruit Prosecco Cocktail
Ingredients
- 3 tbsp white granulated sugar
- Juice of 1 large ruby grapefruit (or approx 240ml / 1 cup store-bought juice)
- 60 ml (1/4 cup) vodka
- 480 g (2 cups) ice
- 360 ml (1 1/2 cups) red or pink prosecco
- Candied grapefruit slices to decorate (optional) — to make these, sprinkle small slices of grapefruit with light brown sugar, then grill/broil or dry-fry on high heat for 1–2 minutes, turning once until lightly caramelised. Leave to cool, make a small slit in each slice and place on the rim of the glass.
Instructions
- Pour the sugar onto a flat plate. Dip the rim of each glass in grapefruit juice, then press the rim into the sugar to coat and create a sugared edge.
- Pour the remaining grapefruit juice, vodka and ice into a blender. Blend until the mixture becomes slushy, scraping down the sides if needed to achieve an even texture.
- Spoon the slush into four glasses, then top each with pink prosecco. Pour gently to keep the fizz and slush texture.
- Garnish with a candied grapefruit slice if using, and serve immediately.
