Reducing meat a little can be an easy way to add variety and cut costs without losing flavour. I aim for at least one meat-free day each week and sometimes two — simple swaps make that easy.

How to make stuffed mushrooms

- Remove the stalks from the mushrooms and chop them finely. Sauté the stalks in butter with minced garlic and chopped spring onions until soft.
- Add baby spinach, cream, seasoning and grated cheddar to the pan. Cook until the spinach wilts and the cheese melts, then finish with a splash of lemon juice.
- Arrange the mushroom caps on a baking tray and spoon in the spinach and cheese mixture.
- Combine panko breadcrumbs with oil, grated parmesan, paprika and a pinch of chilli flakes. Spoon this mixture over each filled mushroom and bake until the tops are golden and crisp.

What to serve it with
These stuffed mushrooms work well on their own or paired with simple sides. Try them with:
- Baked carrot fries
- Kale and bacon mashed potatoes (omit bacon for vegetarian)
- Garlic green beans
- 3-cheese sprout gratin
- Quinoa and goats cheese salad
I’m still trying to convert a certain someone to love mushrooms, but until then I’ll happily enjoy extra portions. Practice makes perfect — or at least more mushroom dishes on the table.

Ingredients
- 4 large portabello mushrooms
- 2 tbsp unsalted butter
- 2 cloves of garlic peeled and minced
- 2 spring onions (scallions) finely chopped
- 65 g (2 packed cups) baby spinach leaves
- 120 ml (1/2 cup) double (heavy) cream
- ¼ tsp salt
- ¼ tsp black pepper
- 50 g (1/2 cup) mature cheddar cheese grated (use a vegetarian alternative if required)
- 1 tbsp fresh lemon juice
- 3 tbsp panko breadcrumbs
- 1 tbsp oil (avocado or neutral oil)
- 25 g (1/4 cup) grated parmesan cheese
- ¼ tsp paprika
- 1 pinch chilli flakes
- 3 tbsp finely chopped fresh parsley
Instructions

Preheat the oven to 180°C/350°F (fan).

Remove the stalks from the mushrooms with a small knife and chop them into small pieces.

Melt the butter in a frying pan over medium heat. Add the chopped stalks, garlic and spring onions and cook for 3–4 minutes until tender.

Stir in the spinach, cream, salt, pepper and cheddar. Cook, stirring occasionally, for 3–4 minutes until the spinach has wilted and the cheese has melted. Stir in the lemon juice.

Spoon the spinach mixture into each mushroom cap and set them on a baking tray.

Mix panko breadcrumbs with oil, parmesan, paprika and chilli flakes until the crumbs are evenly coated. Top each filled mushroom with the panko mixture.

Bake for 15–20 minutes until the breadcrumbs are golden and crisp. Sprinkle with chopped parsley and serve warm.
