Ingredients

  • 1 cooked rotisserie chicken, shredded
  • 1 red bell pepper, deseeded and chopped into small chunks (about 1 cm)
  • 2 tablespoons pickled jalapeños, drained (plus extra to serve)
  • 1 small onion, peeled and thinly sliced
  • 1 tablespoon oil
  • 1 tablespoon tomato purée
  • 2 tablespoons fajita seasoning
  • 300 g (about 10½ oz) chunky salsa (mild or hot)
  • 100 g (1 packed cup) grated mixed cheese (Cheddar, firm mozzarella and red Leicester work well)

To Serve:

  • ½ red onion, peeled and finely diced
  • Fresh coriander (cilantro), roughly chopped
  • Tortilla crisps

Instructions

  1. Preheat the oven to 200°C fan / 425°F / gas mark 7.
  2. Remove all the meat from the rotisserie chicken and shred it. Place the shredded chicken in a shallow roasting tray. Add the red pepper, jalapeños, onion, oil, tomato purée and fajita seasoning. Toss to coat everything evenly in the seasoning.
  3. Pour the salsa over the chicken mixture, then sprinkle the grated cheese on top. Bake for 15 minutes until the cheese is melted and bubbling.
  4. Remove from the oven and scatter over the diced red onion, chopped coriander and extra jalapeños if using. Serve straight from the dish with tortilla crisps for scooping.

Can I make it ahead / freeze it?

I don’t recommend making this ahead or freezing it. The recipe reheats cooked chicken in the salsa sauce, and it’s best not to reheat food more than once.
