Note on the tuna
Use drained tinned tuna for this recipe. If you prefer a stronger tuna flavour, increase the tuna amount. Albacore (white) tuna works well if you want a richer, firmer texture.

Ingredients
Tuna fish cakes
- 500g (1.1lbs) frozen mashed potato pellets, thawed
- 145g (about 5.1oz) tin tuna in olive oil, drained and flaked
- 100g (3.5oz) tinned sweetcorn, drained (or use thawed frozen sweetcorn)
- 2 spring onions (scallions), sliced
- 100g (1 packed cup) grated mature cheddar
- ¼ tsp salt
- ¼ tsp black pepper
- 4 tbsp plain (all-purpose) flour
- 2 medium eggs, beaten
- 75g (1½ cups) panko breadcrumbs
- 4 tbsp oil for frying
To serve
- Buttered green vegetables such as peas, cabbage, green beans or broccoli
Instructions
- Place the thawed mashed potato in a large bowl. Add the flaked tuna, drained sweetcorn, sliced spring onions, grated cheddar, salt and pepper. Stir to combine.
- Put the flour in a shallow bowl, beat the eggs in a second bowl and place the panko breadcrumbs in a third bowl.
- Form the mixture into 8 even patties.
- Dredge each patty in flour, then dip fully in the beaten egg, and finally press into the panko breadcrumbs to coat.
- Heat the oil in a large frying pan over medium heat. When hot, add the fish cakes (work in batches if needed) and fry for 7–8 minutes, turning once, until golden and heated through.
- Remove to a tray and season with a little flaky salt if you like. Serve immediately with buttered greens or your preferred sides.
Notes
Tip on the tuna: For more tuna flavour, double the tuna. Albacore tuna gives a creamier taste and firmer texture.
Working in batches: Keep the first batch warm in a low oven while frying the second batch so everything is served hot.
