  1. Sear the diced pork shoulder in a hot pan.
  2. Add chopped onion, then stir in the spices, garlic and ground ginger.
  3. Pour in stock, coconut milk, stir in peanut butter and fish sauce, then bring to a gentle simmer.
  4. Cover, then transfer to the oven.
  5. Bake at 170°C / 325°F for 90–120 minutes until the pork is falling-apart tender.
  6. Finish with lime juice and fresh beansprouts, then garnish before serving.

Thai Style Peanut Pork Recipe

This simple Thai-inspired peanut pork melts in the mouth. Made with peanut butter, spices and coconut milk, it’s easy and delicious.

Ingredients

  • 1 tbsp sunflower oil
  • 1 kg (2.2 lbs) diced lean pork shoulder
  • 1 onion, peeled and chopped
  • 2 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tsp ground ginger
  • ¼ tsp garlic salt
  • 300 ml (1¼ cups) chicken or vegetable stock
  • 400 ml (14 oz) can full-fat coconut milk
  • 2 heaped tbsp peanut butter
  • 2 tbsp fish sauce
  • juice of 1 lime
  • 100 g (1 cup) beansprouts (fresh or drained canned)

To Serve:

  • boiled rice
  • fresh coriander, roughly torn
  • green chillies, chopped (I use Fresno)
  • chilli flakes (optional)
  • steamed tenderstem broccoli (optional)

Instructions

  • Preheat the oven to 170°C / 325°F (fan). Heat the oil in a large casserole on high until hot.
  • Add the pork and brown on all sides, about 6–8 minutes.
  • Reduce to medium, add the onion and cook for 5 minutes until softened.
  • Stir in the ground coriander, cumin, ground ginger and garlic salt.
  • Add the stock, coconut milk, peanut butter and fish sauce. Stir and bring to a gentle simmer.
  • Cover the pan and place in the oven for 90 minutes to 2 hours, until the pork falls apart. Check in the last hour and add a splash of water if the sauce looks too dry.
  • Remove from the oven, stir in the lime juice and add the beansprouts.
  • Return to the oven for 10 minutes, then remove and stir. Serve over boiled rice, garnished with coriander and chillies or chilli flakes to taste.
