Avocado and Egg Bagel Sandwich Recipe for Breakfast

In the US, cooking an egg into the middle of toasted bread is often called “toad in the hole” — very different from the UK roast-and-sausage dish of the same name. This bagel version makes a delicious breakfast or brunch. It can be a little messy, but that’s part of the charm.

The key to getting the white set while keeping the yolk runny is a frying pan (skillet) with a lid. Covering the pan traps heat so the egg white cooks from above as well as below. If you don’t have a lid, a tent of foil works well.

📋 Ingredients

Bagel – Plain store-bought bagels work well, but feel free to use seeded or everything bagels.

Eggs – Small eggs fit nicely into the hole in the bagel. If you only have regular eggs, you can discard a little of the white into a bowl before using the rest so they fit better.

  1. Widen the hole slightly in the top half of each bagel so an egg will fit. Butter the cut sides.
  2. Place the bagel halves, cut-side-down, in a heated pan. Crack an egg into a small bowl and carefully pour it into the hole in the top half of the bagel. Repeat for the second bagel. Season with a pinch of salt and pepper.
  3. Cover the pan and cook for about 3–4 minutes, checking occasionally, until the whites are set but the yolks remain soft. If the bottom halves get too brown, remove them from the pan while the tops finish cooking under the lid.
  4. Meanwhile, mash the avocado with lime juice, salt and pepper. Spoon this onto the bottom halves of the bagels.
  5. Top the avocado with crumbled feta, chopped coriander and a drizzle of sweet chilli sauce. Place the egg-topped bagel halves on top and serve immediately.

Pro Tip

How to pick a ripe avocado:

  • Gently squeeze the avocado. It should yield slightly — too hard means unripe, too soft means overripe.
  • Look for a bumpy skin rather than a smooth one.
  • Pop off the little stem. If it’s hard to remove, the fruit isn’t ripe. If it comes away easily and the colour underneath is green, it’s ready. Brown under the stem indicates it’s overripe.

Ingredients

Egg Bagels

  • 2 bagels
  • 2 tablespoons salted butter
  • 2 small eggs
  • Pinch of salt and pepper

Avocado filling

  • 1 ripe avocado
  • 1 teaspoon fresh lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

To serve

  • 4 tablespoons crumbled feta cheese
  • 2 tablespoons chopped coriander (cilantro)
  • 1 tablespoon sweet chilli sauce

Instructions

  • Slice the bagels in half horizontally. Enlarge the hole in the top half to about 2 cm (roughly ¾”).
  • Spread the cut sides with butter and place cut-side-down in a heated frying pan over low–medium heat.
  • Crack each egg into a small bowl, then pour into the hole in the top half of each bagel. Season with salt and pepper.
  • Cover the pan (or tent with foil) and cook for 3–4 minutes, checking until the whites are set and yolks remain soft. If the bottom halves brown too quickly, remove them from the pan while the tops finish cooking.
  • While the eggs cook, scoop the avocado into a bowl, add lime juice, salt and pepper, and mash with a fork.
  • Place the bagel bases on plates, spoon on the avocado, then scatter over feta and coriander and drizzle with sweet chilli sauce.
  • Use a spatula to transfer the egg-filled bagel tops onto the avocado layers and serve immediately.

Notes

Tip: Use store-bought guacamole to speed up prep.
