I’m sharing an easy pomegranate and spiced-rum cocktail that’s perfect for New Year’s Eve. I experimented until the balance felt right — not too boozy, with bright pomegranate notes and a ginger finish.

Looking at the photo still makes me smile. The frozen berries in the glass give it a playful look — one blueberry even looks like a winking eye!

I don’t drink heavily these days, so a fruity cocktail like this suits me well. It’s lighter than a straight spirit or a heavy glass of wine, and it’s full of flavour thanks to the pomegranate and Cointreau.

This year we’ll enjoy a quiet evening at home with a little TV and a snack plate for two once the kids are tucked up in bed. No long taxi waits or crowded parties — just a cosy celebration and a couple of festive cocktails.

I love the bittersweet brightness of 100% pomegranate juice in this drink — it adds depth of flavour and a rich colour. Using frozen mixed berries as a substitute for ice keeps the drink chilled without diluting it, and they’re a tasty treat at the end.

If you prefer a non-alcoholic option, a spiced berry cooler makes a lovely alternative and keeps the festive flavours intact.

New Year’s Eve Rum Berry Cocktail

A festive cocktail with spiced rum, Cointreau, pomegranate juice and ginger beer. Frozen berries act as chilled, decorative “ice” that won’t dilute the drink.

Ingredients

  • 90 ml (1/3 cup + 1 tbsp) spiced rum (I use Kraken spiced rum)
  • 510 ml (2 cups + 2 tbsp) pomegranate juice 100% juice, not the diluted kind
  • 30 ml (2 tbsp) Cointreau
  • 240 ml (1 cup) spiced ginger beer
  • 250 g (2 cups minus 3 tbsp) frozen mixed berries
  • Ice optional
  • 90 g (3/4 cup) fresh raspberries
  • A few sprigs of fresh thyme

Instructions 

  • Pour the rum, pomegranate juice, Cointreau and ginger beer into a large jug and stir to combine.
  • Half-fill 4–6 glasses with frozen mixed berries. Add a little ice if you prefer the drink extra cold.
  • Fill the glasses with the cocktail, then garnish each with a few fresh raspberries and a sprig of thyme. Serve immediately.
