Baked Parmesan Sprouts with Bacon

Ingredients

  • 400 g (14 oz) sprouts
  • 1 medium egg
  • 1 tbsp cold water
  • 75 g (3/4 cup) Parmesan cheese grated
  • pinch salt and pepper
  • 4 strips of fried or grilled bacon chopped into small pieces (smoked streaky bacon recommended)
  • 2 tbsp finely chopped fresh parsley

Instructions

  • Preheat the oven to 200°C/400°F (fan). Prepare a medium baking tray.
  • Trim and peel any loose outer leaves from the sprouts and cut off the stalk ends. Halve the sprouts.
  • Break the egg into a bowl and whisk together with the water.
  • Put the grated Parmesan into a separate bowl.
  • Dip each sprout half into the egg, then roll in the Parmesan until fully coated. Arrange the coated sprouts on the baking tray and season with a pinch of salt and pepper.
  • Try to keep the sprouts in a single layer; a slightly snug fit is fine.
  • Bake for 15–20 minutes, until the Parmesan is golden and the sprouts are tender.
  • Remove from the oven, scatter over the cooked bacon pieces and chopped parsley, then serve immediately.
