Spiced Minced Beef Fajita Bowls with Peppers and Rice

Swapping steak or chicken for minced beef makes these fajita bowls more budget-friendly without sacrificing flavour. Toppings are flexible — use whatever you have in the fridge. Chopped courgette (zucchini), peas, green beans, mushrooms or celery work well stirred into the mince. I switch things up depending on what’s on hand.

Minced beef is ideal for fajita bowls because it picks up spices and stays tender. While the rice cooks, the peppers soften and the mince browns — then it’s all about the toppings.

Everyone can build a bowl to their taste: some pile on jalapeños, others keep it simple with cheese. Below are plenty of topping ideas so you can make the bowls your own.

Cook rice with the absorption method (about 20 minutes). While it cooks, brown the minced beef with salt, pepper, chilli flakes and fajita spice. Add sliced peppers and garlic and cook for another 5 minutes. Divide the rice between bowls, top with the beef and peppers, then add your favourite toppings.

Note on the beef

  • I prefer 20% fat mince for juiciness and flavour. Leaner mince can dry out slightly; if you use it, add a little oil and a splash of beef stock to restore moisture.

Smoky, spiced beef and sweet, soft peppers sit on fluffy rice, finished with creamy soured cream, avocado and a bright squeeze of lime. Fresh coriander lifts every bite.

🍽️ What to serve it with

These fajita bowls are versatile. My favourite toppings are avocado, red onion, lime, cheese, soured cream and coriander. Other ideas to try: crunchy lettuce, white onion, cucumber, carrot sticks, tomatoes, pickled jalapeños or gherkins.

Ingredients

Rice, Minced Beef and Peppers

  • 200 g (1 cup) uncooked long grain rice
  • 1 tablespoon neutral oil (avocado oil works well)
  • 500 g (1.1 lb) minced beef
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon chilli flakes
  • 2 tablespoons fajita spice
  • 1 red bell pepper, deseeded and sliced
  • 1 yellow bell pepper, deseeded and sliced
  • 2 cloves garlic, peeled and minced

Also:

  • 1 avocado, de-stoned and diced
  • 1 small red onion, thinly sliced
  • 4 heaped tablespoons salsa
  • 4 heaped tablespoons soured cream
  • 50 g (½ cup) grated cheddar cheese
  • 1 lime, sliced into half moons
  • a small bunch fresh coriander (cilantro), roughly chopped
  • 2 tablespoons sriracha or sweet chilli sauce

Instructions

  1. Pour 360 ml (1 ½ cups) water into a saucepan and bring to the boil. Add the rice, stir once, cover and reduce the heat to low. Cook for 20 minutes until the water is absorbed and the rice is tender.
  2. Meanwhile, heat the oil in a large frying pan over high heat.
  3. Add the minced beef, salt, pepper, chilli flakes and fajita spice. Fry for 4–5 minutes, breaking up any large pieces, until the mince is light brown.
  4. Add the sliced peppers and minced garlic and cook for another 5 minutes, stirring often. Turn off the heat.
  5. When the rice is ready, remove the lid and divide it between four bowls.
  6. Spoon the cooked minced beef and peppers over the rice.
  7. Top with avocado, red onion slices, salsa, soured cream, grated cheese and lime slices.
  8. Finish with chopped coriander and a drizzle of sriracha or sweet chilli sauce, then serve.

Notes

Note on the beef

I use 20% fat mince for extra juiciness and flavour. If you choose leaner mince, add a small drizzle of oil and a splash of beef stock to keep it moist.

Make it vegetarian

Swap the beef for vegetarian mince or very finely diced mushrooms for a meat-free version.
