These Mini Snickers Cheesecake bites sit on a crumbly Oreo base, are filled with a silky cream cheese and peanut butter mixture, and finished with chopped Snickers and melted chocolate. Completely irresistible.

At first I thought buying a nine-pack of Snickers was prudent. Turns out these tiny cheesecakes only need one regular Snickers bar to top all twelve bites. I bought the multipack because I wanted leftovers — and then promptly hid them for safekeeping. A chocolate-smeared mouth was probably a giveaway.

I made these bite-sized Snickers cheesecakes for a school charity bake sale and nearly regretted bringing all but the test sample — they disappeared fast. They’re essentially a mini, no-bake version of a Snickers cheesecake: a crunchy Oreo base, a light peanut butter and cream cheese filling, and a sweet, chocolatey finish. Pure comfort food in miniature.

I managed to photograph the half-eaten test one before it vanished. They were so good I immediately started planning another batch — and another trip to the shop for more Snickers.

Ingredients
Oreo Base:
- 20 Oreo cookies broken into rough pieces
- 4 tbsp unsalted butter melted
Filling:
- 180 g full-fat cream cheese
- 7 tbsp peanut butter
- 75 g confectioner’s sugar (powdered sugar)
- 1 tsp vanilla extract
- 120 ml double (heavy) cream
Toppings:
- 1 regular Snickers bar, cut into small pieces
- 50 g milk chocolate, melted

Line a 12-hole small cake tin with paper cases and set aside.

Make the base: pulse the Oreos in a food processor until coarse crumbs form. Stir in the melted butter, spoon the mixture into the paper cases, press down with the back of a spoon, and chill in the fridge for at least 30 minutes.

For the filling, whisk together the cream cheese, peanut butter, confectioner’s sugar and vanilla until smooth.

In a separate bowl, whisk the double cream to soft peaks. Fold the cream cheese mixture into the whipped cream until evenly combined. Spoon or pipe the filling onto the chilled Oreo bases.

Top each bite with two small pieces of chopped Snickers, drizzle with melted milk chocolate and serve. Store covered in the fridge for up to two days.
