  1. Coat the chicken with cornflour, light soy sauce and white pepper. Heat the oil in a large frying pan.
  2. Cook the chicken until lightly browned, then add the sliced onions and soften briefly.
  3. Add garlic, curry powder, Chinese five spice, turmeric, sugar and salt and fry, stirring, to bloom the spices.
  4. Pour in the stock and simmer for 5 minutes. Stir in the peas and milk, and add a cornflour slurry if you prefer a thicker sauce.
  5. Serve immediately.

Ingredients

Chicken

  • 3 large chicken breasts (about 525g), sliced into strips
  • 1 tbsp cornflour (cornstarch in USA)
  • 1 tbsp light soy sauce
  • 1/4 tsp white pepper
  • 2 tbsp oil

Curry Sauce

  • 1 large onion, peeled and sliced into chunky strips
  • 2 cloves garlic, minced
  • 2 tbsp mild curry powder (use medium or hot if you prefer)
  • 1/2 tsp Chinese five spice
  • 1 tsp turmeric
  • 1 tsp sugar
  • 1/2 tsp salt
  • 480 ml (2 cups) chicken stock
  • 100 g (3/4 cup) frozen peas (petit pois preferred)
  • 60 ml (1/4 cup) full-fat milk

Optional – cornflour slurry to thicken

  • 1 tbsp cornflour (cornstarch), mixed with 2 tbsp cold water

To Serve

  • Egg fried rice
  • Prawn crackers

Instructions

  • Toss the chicken with the cornflour, light soy sauce and white pepper until evenly coated.
  • Heat the oil in a large frying pan over medium-high heat.
  • Add the chicken and cook, stirring occasionally, for about 5 minutes until very lightly browned.
  • Add the sliced onion and cook for 2 minutes, stirring occasionally.
  • Add the garlic, curry powder, Chinese five spice, turmeric, sugar and salt. Fry, stirring often, for 2 minutes to release the flavours.
  • Pour in the chicken stock, bring to the boil, then simmer for 5 minutes.
  • Stir in the peas and cook for 2–3 minutes until heated through, then stir in the milk.
  • If you prefer a thicker sauce, mix the cornflour with cold water to make a slurry and add slowly to the simmering sauce, stirring until it thickens.
  • Serve with egg fried rice and prawn crackers.
