Ingredients

    (2 cups minus 4 tsp) quick cook oats
    use gluten-free if desired
  • 160

    (3/4 cup + 2 tsp) dried berries
    my mix has sour cherries, raisins, and cranberries

    (1/4 cup) honey

  • You’ll also need two 20x20cm baking tins

Instructions

  1. Place the oats in a large bowl. Add in the dried berries (slice any larger berries in half before placing in the bowl – you want everything to be about raisin-sized). Reserve a tbsp of the flaked almonds, then add the rest to the bowl along with the salt, melted coconut oil, honey, soft light-brown sugar, and almond extract.
  2. Mix everything together until well combined. Spoon the mixture into a 20×20-centimeter baking tin that has been lined with parchment paper, ensuring excess parchment hangs over the sides. Flatten the mixture and push it to the edges using a spoon, then top with the reserved flaked almonds.
  3. Place another piece of baking parchment on top of the mixture and then position the second 20×20-centimeter baking tin on top. Use this top tin to firmly squish down the mixture. This crucial step prevents the bars from falling apart when you cut them. You can press down with your hands or even stand on the top tin for maximum compaction.
  4. Place the tin in the fridge for at least one hour to allow the bars to firm up.
  5. Once firm, remove the block from the tin using the parchment paper, and cut into 9 squares or 12 slices.
  6. Serve straight away, or wrap individually and store in an airtight container in the fridge or at room temperature until serving. They will be a little firmer if served directly from the fridge.
