Cauliflower Arancini filled with creamy boursin cheese. Quicker and healthier than regular arancini. Baked rather than fried.

Cauliflower has truly revolutionized kitchens worldwide, offering a nutritious and delicious alternative in many popular dishes. From low-carb pizza crusts that satisfy your cravings (a challenge many of us are still perfecting!) to vibrant and flavorful side dishes, its capabilities are boundless. Consider the fragrant Coriander Cauliflower Rice, often paired with succulent Thai prawns for a light yet satisfying meal – it’s an absolute game-changer. And who could forget the comforting embrace of a Creamy Cauliflower Soup? It’s a velvety, heartwarming delight that consistently earns rave reviews for its rich flavor and smooth texture.

And now, we welcome the crispy, garlicky, and incredibly creamy cauliflower arancini to this illustrious list. While they might not be perfectly uniform spheres – a common challenge when opting for a healthier, baked alternative over traditional deep-frying – their incredible taste and significantly reduced oil content more than make up for any minor aesthetic imperfections. These baked arancini use a mere tablespoon of olive oil and a few squirts of cooking spray for the entire batch, a stark contrast to the substantial amount of oil required for frying. This mindful approach to preparation completely opens the door to guilt-free indulgence, allowing us to lavishly stuff these cauliflower wonders with rich, creamy Boursin cheese and coat them in delightfully crisp breadcrumbs. Despite sounding decadent, each Cauliflower Arancini is surprisingly light, coming in at only 76 calories, making them an ideal choice for a healthy appetizer or snack.

A Quick and Easy Delight: No Pre-Cooking, No Overnight Chilling!

One of the most appealing aspects of these Cauliflower Arancini is their incredible speed and ease of preparation. Unlike traditional rice arancini, which often demand time-consuming risotto cooking and an overnight chilling period, these cauliflower versions streamline the process considerably. There’s no need for any pre-cooking of the cauliflower; simply grate it and mix. This means you can have the entire batch prepared and ready for the oven in a mere 20 minutes, and they’ll emerge golden brown and ready to enjoy just 14 minutes later. It’s the perfect recipe for busy weeknights, last-minute gatherings, or whenever you crave a delicious homemade treat without the extensive culinary commitment.

Served hot straight out of the oven, these Cauliflower Arancini are a taste sensation all on their own. The combination of tender cauliflower, savory cheddar, aromatic garlic salt, and the luscious Boursin center creates a symphony of flavors and textures that is truly irresistible. For those who appreciate a hint of spice, a light drizzle of sriracha can elevate the experience, adding a vibrant kick that perfectly complements the creamy interior and crispy exterior. They are versatile enough to serve as a sophisticated appetizer for guests, a fun and healthy snack for the family, or even a light lunch when paired with a fresh salad.

Prep Time:

Servings: 11 Arancini
Course: Appetizer
Cuisine: Italian

Ingredients

  • 40 squirts fry light spray
  • 1 small cauliflower grated
  • 1 egg lightly whisked
  • ¼ tsp garlic salt
  • 50 g cheddar cheese grated
  • 1 tbsp olive oil
  • salt and pepper
  • 45 g of Boursin cheese
  • 50 g panko breadcrumbs

Instructions

  • Preheat your oven to 170°C (340°F) and lightly spray a large metal baking sheet with 7 squirts of fry light or a similar cooking spray. This will help prevent sticking and promote even browning.
  • In a spacious mixing bowl, combine the freshly grated cauliflower, whisked egg, garlic salt, shredded cheddar cheese, and olive oil. Add a generous pinch of salt and freshly ground black pepper to taste. Mix all the ingredients thoroughly until well combined, then set the bowl aside while you prepare the filling.
  • Take your Boursin cheese (or similar creamy garlic and herb cheese) and carefully chop it into 11 equal pieces. Gently roll each piece between your palms to form small, marble-sized balls. These will be the delightful creamy centers of your arancini. Place these cheese balls on a plate and set aside.
  • Pour your Panko breadcrumbs into a shallow bowl. Season the breadcrumbs with an additional pinch of salt and pepper. This step ensures every bite of your arancini is perfectly seasoned, adding to the overall flavor profile.
  • Now, it’s time to assemble your arancini. Take approximately one tablespoon of the cauliflower mixture in your hand. Roll it into a ball, then gently flatten it into a disc shape. It will be a bit sticky and messy, but don’t worry, that’s part of the process! Place one of the small Boursin cheese balls in the center of the cauliflower disc. Carefully wrap the cauliflower mixture around the cheese, sealing it completely to form a compact ball. Ensure the Boursin is fully enclosed within the cauliflower. Once formed, roll the cauliflower ball in the seasoned Panko breadcrumbs, ensuring an even coating. Place the coated ball onto your prepared baking sheet. Repeat this process with the remaining cauliflower mixture and Boursin cheese, aiming to create approximately 11 cauliflower arancini balls.
  • Once all the arancini are formed and placed on the baking sheet, lightly spray each ball with about 3 squirts of fry light (or another light cooking spray). This helps achieve that beautiful golden-brown color and crispy texture during baking. Transfer the baking sheet to your preheated oven and bake for 14 minutes, or until the arancini are gloriously golden brown and heated through.
  • Serve your freshly baked Cauliflower Arancini immediately while they are warm and the Boursin cheese is delightfully melty. Enjoy!
