However, life often calls for a lighter approach without sacrificing flavor, especially when aiming for a healthier lifestyle.
Currently, I’m focusing on shedding a few pounds, which means rethinking some of those indulgent additions. My goal has been to discover innovative ways to infuse bold flavors into my cooking without relying on high-calorie ingredients. This quest led me to a simple yet transformative technique: scorching vegetables!
The idea initially sparked with just scorching some bell peppers. But then, I noticed a generous supply of cherry tomatoes in the fridge. My first thought was to roast them in the oven, but the prospect of waiting an hour or more for them to cook didn’t quite fit my busy schedule or my immediate craving for a quick, delicious meal.

I’ve never been a fan of plain grilled tomatoes. For me, they often turn into a warm, somewhat unappealing mush. I wanted something more. So, I experimented. Before grilling, I lightly seasoned the cherry tomatoes with a generous pinch of garlic salt, a dash of regular salt and pepper, and a delicate drizzle of both olive oil and balsamic vinegar. The result was nothing short of a revelation! The intense heat of the grill created a beautiful char on the tomatoes, caramelizing their natural sugars and deepening their flavor profile significantly. This simple step elevates them far beyond any average grilled tomato.
This approach to vegetables worked wonders for our family dinner. Not only did my partner Chris and I thoroughly enjoy it as a Slimming World friendly meal, but the kids also devoured it, which is always a win in my book! Ingredients
- 1 red pepper
- 1 yellow pepper
- 10 cherry tomatoes
- large pinch garlic salt
- large pinch salt and pepper
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- 300 g dried tagliatelle gluten free if required
- 5 sprays frylight or other 1-cal-per-spray oil
- 1 medium sized onion peeled and chopped
- 1 tsp light brown sugar
- 2 cloves garlic peeled and crushed
- 1 tbsp tomato puree/paste usually gluten free, but best to check if required
- 1 x 400g can chopped tomatoes
- 1 tsp worcestershire sauce Lea and Perrins is gluten free
- 1 tsp dried oregano
- 2 cooked chicken breasts* chopped into large chunks
- 4 tbsp half-fat crème fraiche
To Serve:
- Small bunch flat-leaf parsley roughly chopped
- Large pinch black pepper
- 2 tbsp grated parmesan
Instructions

Begin by preparing your vegetables for scorching. Place both the red and yellow bell peppers on a foil-lined grill pan. Halve the cherry tomatoes and arrange them on the same pan. Generously sprinkle the tomatoes with garlic salt, a pinch of salt and pepper, and drizzle with olive oil and balsamic vinegar. Grill the tomatoes under a hot grill until they start to blacken slightly on top, indicating that delicious caramelization. Remove the tomatoes and continue grilling the peppers, turning them every couple of minutes until their skins are fully blackened. This process typically takes about 15 minutes. Once charred, remove the peppers and immediately wrap them in foil; this helps steam the skins, making them much easier to peel once cooled.

While the peppers are cooling, bring a large pan of water to a rolling boil. Add the tagliatelle and cook according to the package instructions, usually around 12 minutes, until al dente.

Concurrently, start on your creamy tomato sauce. Heat a large frying pan and spray it with a low-calorie oil spray (like Frylight). Add the chopped onions and sauté for about 5 minutes until they begin to soften and become translucent. Stir in the light brown sugar and crushed garlic, cooking for another minute while stirring constantly to release their aromas. Next, add the tomato puree, canned chopped tomatoes, Worcestershire sauce, and dried oregano. Stir well, bring the sauce to a gentle simmer, and allow it to cook for 5 minutes. For a smoother sauce, you can optionally use a hand blender to blend it briefly off the heat.

Return to your scorched peppers. Take them out of the foil, peel off the blackened skins (they should come off easily), and discard the seeds. Slice the peeled peppers into thin strips. Add these chopped peppers, the grilled cherry tomatoes, and the chunks of cooked chicken breast to the frying pan with the tomato sauce, allowing them to heat through gently.

By now, your tagliatelle should be perfectly cooked. Drain the pasta, making sure to reserve a few tablespoons of the starchy cooking water – this will be key to achieving a luscious sauce consistency.
