The Story of Rogan Josh
Rogan Josh, meaning “red lamb” or “lamb cooked in clarified butter,” is a signature dish from Kashmiri cuisine, often considered one of the subcontinent’s most iconic curries. Its vibrant red color traditionally comes from the liberal use of dried Kashmiri chilies, which impart a beautiful hue without excessive heat. The dish is characterized by its rich, intense flavor derived from a blend of aromatic whole and ground spices, often including ginger, garlic, cloves, cinnamon, and cardamom, and slow-cooked lamb. Originally brought to Kashmir by the Mughals, Rogan Josh has evolved over centuries, becoming a staple in Indian restaurants and homes worldwide. Our recipe honors this rich heritage, focusing on tender lamb and a harmonious balance of classic spices to bring you an authentic taste experience.
Why This Lamb Rogan Josh Recipe?
There are countless Rogan Josh recipes out there, but this one stands out for several reasons. Firstly, it focuses on achieving that melt-in-your-mouth lamb texture through a crucial marination step and extended oven cooking. This slow-cooking method allows the tough cuts of lamb to break down, becoming incredibly tender and absorbing every nuance of the spice-infused gravy. Secondly, we’ve designed this recipe to be approachable for home cooks without compromising on authentic flavor. You won’t need a pantry full of obscure ingredients, yet the result will taste like it came from your favorite Indian restaurant. Finally, the ability to easily adjust the spice level means everyone at your table can enjoy it, from those who prefer a gentle warmth to those who crave a fiery kick.
How to Make Perfect Lamb Rogan Josh
Creating this magnificent lamb rogan josh is a rewarding culinary journey, and each step contributes to its incredible depth of flavor. Here’s an overview of the process:
- Marinate the Lamb: We begin by marinating the lamb chunks in a mixture of aromatic spices – fresh ginger, garlic, turmeric, cumin, black pepper – and natural yogurt. This crucial step not only infuses the lamb with initial flavor but also helps to tenderize the meat, ensuring it’s succulent and absorbs the curry sauce beautifully during cooking. Allow at least 30 minutes for marination, but for even deeper flavor, you can marinate it overnight in the refrigerator.
- Sear and Sauté: Next, the marinated lamb is seared in ghee (or oil) in a heavy-bottomed pan until lightly browned on all sides. This browning creates a rich crust that locks in juices and adds complexity to the final dish. In the same pan, we then sauté finely chopped onions, red and yellow bell peppers, and fresh chilies until softened. This forms the aromatic base of our curry.
- Build the Flavor Foundation: Once the vegetables are tender, we add a blend of fragrant whole and ground spices, including coriander stalks, cloves, cinnamon, cumin, paprika, salt, and pepper, along with a generous amount of tomato paste (or puree). These ingredients are dry-fried for a few minutes, allowing the heat to “bloom” the spices, intensifying their fragrance and creating a deeply flavorful roux.
- Simmer and Slow Cook: To the spiced base, we add liquid: tinned chopped tomatoes and a rich lamb or beef stock. A few whole cardamom pods are also added at this stage – threading them onto cotton string can make them easier to retrieve later. Bring the mixture to a gentle simmer, ensuring all ingredients are well combined.
- Oven Perfection: The magic truly happens in the oven. The curry is covered and slow-cooked for approximately 3 hours at a low temperature. This extended cooking time is key to achieving incredibly tender lamb that practically melts in your mouth and allows the complex flavors to fully develop and deepen, creating a velvety, rich sauce.
- Serve with Style: Once cooked to perfection, your Lamb Rogan Josh is ready to be served. It pairs wonderfully with a bed of fluffy Pilau Rice or plain boiled rice, and a large piece of warm Homemade Flatbread or naan bread is essential for soaking up every last drop of that glorious sauce. Garnish generously with fresh chopped coriander for a burst of freshness.
Pro Tips for Success
For the most succulent results, keep an eye on your curry during the final hour of oven cooking. Give it a gentle stir and, if the sauce appears to be reducing too much or looking a little dry, add a small splash of boiling water or extra stock to maintain that perfect consistency. This prevents sticking and ensures your lamb stays moist and tender.
Choosing the Right Lamb: For the best Rogan Josh, opt for cuts like lamb shoulder, leg, rump, or neck. These cuts have a good amount of connective tissue and fat, which break down beautifully during slow cooking, yielding incredibly tender and flavorful results. Cut your lamb into uniform 1-inch chunks to ensure even cooking.
Blooming Your Spices: Don’t rush the step where you fry the ground spices with the tomato paste. This process, known as “blooming” the spices, releases their essential oils and deepens their flavors significantly, preventing a raw, powdery taste in your final curry. Stir constantly to prevent burning.
The Importance of Ghee: While oil can be used, cooking in ghee (clarified butter) adds an unparalleled richness and nutty flavor that is traditional in Indian cooking and elevates this Rogan Josh to another level. Its high smoke point also makes it ideal for searing the lamb.
Adjusting the Spice Level
The heat level of your Rogan Josh is entirely in your control and depends on the type of fresh chilies you choose. For a milder curry, I typically use Fresno or Serrano chilies, which offer a gentle warmth. If you prefer a bolder spice, feel free to substitute with hotter varieties like Thai chilies. Conversely, for a very mild version, you can use less spicy chilies such as jalapeños, or even omit them entirely if you’re cooking for those who are sensitive to heat.
Should you find your curry a little too spicy after cooking, there’s an easy fix! Simply stir in a tablespoon or two of double/heavy cream or full-fat coconut milk (or coconut cream) just before serving. These ingredients will mellow out the heat and add a lovely creamy texture, creating a perfectly balanced flavor profile.

❓ Frequently Asked Questions
Absolutely! This recipe adapts beautifully to a slow cooker. Follow the initial steps of marinating the lamb and searing it, along with sautéing the onions, peppers, and spices in a pan. Once that’s done, transfer everything to your slow cooker. Cook on high for 5-6 hours or on low for 7-8 hours, until the lamb is incredibly tender. Keep in mind that slow cookers retain more liquid, so it’s advisable to reduce the stock to about 480ml (2 cups) to prevent the curry from becoming too thin.
This recipe is designed to serve 6 people, making it perfect for freezing extra portions. If you wish to scale it down to serve 3-4 people, reduce the lamb to 500g (1.1lb) and the stock to 480ml (2 cups). The cooking time will remain largely the same, but always check for lamb tenderness. For larger gatherings, you can easily double the ingredients; ensure you use a sufficiently large pan or divide it into two if necessary, and adjust oven cooking time if needed to accommodate more volume.
Yes, Rogan Josh is a fantastic make-ahead meal, as the flavors often deepen and improve overnight. Prepare the curry fully, then allow it to cool completely before covering and refrigerating for up to 3 days. To reheat, gently warm it in a pan over medium heat, stirring occasionally, until it’s piping hot throughout. Alternatively, reheat individual portions in a microwave-safe bowl, loosely covered, stirring periodically until thoroughly heated.
Absolutely! Rogan Josh freezes exceptionally well. After cooking, let the curry cool completely. Transfer it to airtight freezer-safe containers and freeze for up to 3 months. When you’re ready to enjoy it, simply defrost it overnight in the refrigerator. Then, reheat it following the make-ahead instructions: either on the stovetop or in the microwave until it’s hot throughout. This makes it a perfect dish for meal prepping or having a quick, delicious dinner on hand.

Ingredients
For the Marinade:
- 2 tsp minced ginger
- 4 cloves garlic, peeled and minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp freshly ground black pepper
- 4 tbsp natural yogurt
- 900 g (2lbs) lamb, chopped into 1-inch chunks (use shoulder, leg, rump, or neck)
For the Rogan Josh Curry:
- 2 tbsp ghee or oil
- 1 large onion, peeled and roughly chopped
- 1 red bell pepper, deseeded and roughly chopped
- 1 yellow bell pepper, deseeded and roughly chopped
- 3 fresh red chillies, finely chopped (adjust to taste, e.g., Fresno or Serrano for mild, Thai chilies for hot)
- ½ a bunch (about 20g/0.7oz) of fresh coriander (cilantro), chopped (chop the stalks and leaves separately)
- 3 whole cloves
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1 tbsp ground coriander
- 2 tsp paprika
- ½ tsp salt (or to taste)
- ½ tsp freshly ground black pepper
- 3 tbsp tomato puree (or paste)
- 600 ml (2.5 cups) lamb or beef stock (water plus 2 stock cubes is fine)
- 400 g (14 oz) tin finely chopped tomatoes
- 4 cardamom pods (optional: thread them onto a piece of natural cotton for easier removal)
To Serve:
- Freshly chopped coriander (cilantro) leaves
- Boiled or pilau rice
- Naan bread or chapati
Instructions
-
In a large bowl, combine the minced ginger, garlic, ground turmeric, cumin, black pepper, and natural yogurt. Add the lamb pieces and mix thoroughly, ensuring each chunk is well coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
-
Preheat your oven to 160°C (320°F) for fan-assisted ovens, or 180°C (350°F) for conventional ovens.
-
Heat the ghee or oil in a large, oven-safe casserole pan or Dutch oven over high heat. Once hot, add the marinated lamb in batches if necessary to avoid overcrowding, and brown it lightly on all sides. This usually takes about 8-10 minutes. Remove the browned lamb from the pan and set aside.
-
Reduce the heat to medium. Add the roughly chopped onions, red and yellow bell peppers, and fresh chilies to the same pan. Sauté for about 5 minutes, stirring occasionally, until the onions begin to soften and become translucent.
-
Stir in the chopped coriander stalks (reserving the leaves for garnish), whole cloves, ground cinnamon, ground cumin, ground coriander, paprika, salt, pepper, and tomato puree. Cook for another 5 minutes, stirring regularly, allowing the spices to bloom and release their intoxicating aroma. This step is crucial for building deep flavor.
-
Return the browned lamb to the pan. Pour in the lamb or beef stock, add the finely chopped tomatoes, and the cardamom pods. Stir everything together well and bring the curry to a gentle simmer.
-
Cover the pan tightly with a lid and transfer it to the preheated oven. Cook for 3 hours, or until the lamb is incredibly tender and easily pulls apart. During the last hour of cooking, check the curry once or twice and give it a stir. If the sauce looks too dry or is reducing too much, add a splash of boiling water or extra stock to achieve your desired consistency.
-
Once cooked, remove the cardamom pods (if you threaded them) and discard. Serve the Lamb Rogan Josh hot, garnished with the reserved fresh chopped coriander leaves. It is traditionally enjoyed with pilau or boiled rice and a generous side of naan bread or chapati to soak up the rich sauce.
Notes
You can cook this recipe in the slow cooker if you prefer. Follow the recipe right up until you place it in the oven, and instead transfer to the slow cooker. Cook on high for 5-6 hours or low for 7-8 hours. I would reduce the stock down to 480ml (2 cups), since the liquid doesn’t cook off as much in a slow cooker.
Scaling down the recipe
You can reduce this recipe down to serve 3-4 people. Reduce the lamb down to 500g (1.1lb), reduce the stock down to 480ml (2 cups), but otherwise you can leave the rest of the quantities and the cook time the same. I like to make this curry to serve 6 people, but then freeze a couple of portions for a quicker dinner another time.
Can I make it ahead?
Yes, this recipe can be made ahead, then cooled, covered and refrigerated for up to 3 days. Reheat in a pan, over a medium heat, stirring occasionally, until piping hot throughout. Alternatively reheat in the microwave in a microwave-safe bowl, loosely covered, stirring a couple of times, until piping hot throughout.
Can I freeze it?
Yes, make the recipe, then cool, cover and freeze. Defrost overnight in the refrigerator, then reheat, as per the make-ahead instructions above.
