This Guacamole and Egg Breakfast Bowl features a simple homemade mild guacamole (I leave out garlic and fresh chilies for a lighter morning flavor), sliced egg, baby spinach and a dollop of sour cream. A drizzle of sweet chilli sauce is optional, but it’s a great addition if you can’t decide.
It may look a bit like a salad and it’s different from the comforting pancakes, Asian dishes, hot smoothies or chocolate banana oat cookies often shared here, but this Guacamole and Egg Breakfast Bowl is seriously delicious.
Eat every bite and savour it — crunchy toast pieces are optional, though I prefer mine with toast.

I told Chris about this breakfast and he replied with a green-puking emoticon — he’s not keen on eggs unless they’re in cakes or in egg-fried rice, and he only likes guacamole when it’s served with a big pot of chilli. Still, I hope this bowl wins you over (no more puking emoticons please!).
The Guacamole and Egg Breakfast Bowl Recipe:

Guacamole Egg Breakfast Bowl Recipe
Ingredients
- 1 egg room temperature
- 90 g (1 cup) baby spinach leaves
- ⅛ red onion peeled and finely sliced
- 1 small piece toast chopped into chunks
- 1 tbsp sour cream
- 2 tsp sweet chilli sauce
- 1 pinch black pepper
Guacamole:
- 1 ripe avocado peeled, de-stoned and roughly chopped
- ⅛ red onion peeled and finely chopped
- 1 tbsp chopped coriander/cilantro
- 1 pinch salt
- 1 pinch pepper
- juice of half a lime
Instructions

Place the egg in a pan of cold water, bring to the boil, then simmer for 5–6 minutes. Turn off the heat, drain and cool the egg (submerge in cold water to speed cooling if you like). Peel and slice in half.

Make the guacamole by mashing together the avocado, chopped red onion, chopped coriander, lime juice and a pinch each of salt and pepper until combined.

Place the spinach in a bowl. Top with the guacamole, the sliced egg, red onion slices, toast cubes, a dollop of sour cream, a drizzle of sweet chilli sauce if using, and a sprinkle of black pepper. Serve immediately.
