I’m the only one in my family who really likes mushrooms, but I always make this sauce when I cook steak at home.
Chris usually gives me his mushrooms and takes extra creamy sauce instead — a win-win. I like Chestnut mushrooms, but any variety works well.

📋 Ingredients for Creamy Mushroom Sauce

- Mushrooms — Chestnut mushrooms are used here, but any kind you like will work.
- Cream — Use double (heavy) cream for a luscious sauce that won’t split.
- Stock — Chicken stock is used, but beef, vegetable or another good stock is fine.
- Wine — White wine adds depth; if you don’t use wine, replace it with more stock.

- Sauté shallots in butter and oil over medium heat until softened.
- Add mushrooms, garlic, salt, pepper and thyme; cook for about three minutes.
- Add wine and increase heat to reduce; stir in stock, cream and any pan juices, then simmer for two to three minutes until hot.
Pro Tip
To thicken the sauce, mix 1 tbsp cornflour with 3 tbsp cold water to make a slurry. Whisk it into the bubbling sauce slowly until you reach the desired consistency.

This sauce is fantastic over steak but also delicious with pasta (finish with a little parmesan) or piled onto a baked potato. If you have steak pan juices, add them for incredible flavour.

Creamy Mushroom Sauce Recipe

Ingredients
- 1 tbsp (15g) unsalted butter
- ½ tbsp sunflower oil (or use steak pan juices if available)
- 2 shallots, peeled and finely chopped
- 8 chestnut mushrooms, sliced
- 2 cloves garlic, peeled and minced
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp dried thyme or 2 sprigs fresh thyme
- 120 ml (½ cup) white wine
- 120 ml (½ cup) chicken stock
- 180 ml (¾ cup) double (heavy) cream
Instructions
- Add the butter and oil to a frying pan and heat over medium heat.
- When the butter has melted, add the shallots and cook 2–3 minutes until just starting to soften.
- Add the mushrooms, garlic, salt, pepper and thyme. Cook for about 3 minutes until lightly softened.
- Add the wine, increase heat to high and boil briefly, then simmer until most of the liquid evaporates (about 5 minutes).
- Stir in the stock and cream and heat through for 2–3 minutes. If you have steak juices from resting, add them now. Bring back to a simmer, then remove from the heat.
- Serve warm over steak or your chosen dish.
Notes
Can I make it ahead?
Yes. Cool quickly, cover and refrigerate for up to two days. Reheat gently over low heat, add a splash of milk if it’s too thick.
Ingredient swaps
Use white or brown onion instead of shallots, add extra stock if you don’t have wine, or try different mushrooms such as button or portobello.
