Ingredients

For the Salmon:

  • 2 salmon fillets
  • 2 tsp Cajun spice mix
  • 2 tsp light brown sugar
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tsp oil

For the Avocado Orange Salsa:

  • 1 ripe avocado diced
  • 1 orange skin sliced off and chopped into chunks (see tip below)
  • ½ of a small red onion peeled and finely chopped
  • 20 g (1/2 packed cup) coriander (cilantro) leaves, finely chopped (stalks discarded)
  • 1 Jalapeno pepper , thinly sliced (substitute with your favorite mild, fresh, chili pepper)
  • 2 tbsp lime juice
  • zest of one lime
  • 1 tbsp honey
  • pinch of salt and pepper

To Serve:

  • Steamed/boiled rice
  • Chopped cucumber
  • Sesame seeds
  • Lime wedges

Instructions

Air Fryer Method:

  • Gently place the 2 salmon fillets, skin-side-down, into your air fryer basket. For effortless cleanup, I highly recommend using an air fryer liner. Ensure there’s enough space between the fillets for even cooking.
  • In a small bowl, combine the 2 tsp Cajun spice mix, 2 tsp light brown sugar, ¼ tsp salt, and ¼ tsp black pepper. Sprinkle this delicious seasoning mixture evenly over the top of each salmon fillet. Drizzle or lightly spray with 2 tsp of oil to help the spices adhere and create a lovely crust.
  • Cook in the air fryer at 200°C (400°F) using the air fry setting for 8-10 minutes. The exact cooking time will vary depending on the thickness of your salmon fillet and your air fryer model. The salmon should be cooked through, flaky, and caramelized on top.

Oven Method:

  • Preheat your oven to 200°C (400°F) (fan-assisted setting if available for more even cooking).
  • Place the 2 salmon fillets, skin-side-down, onto a non-stick baking tray or one lined with parchment paper.
  • In a small bowl, combine the 2 tsp Cajun spice mix, 2 tsp light brown sugar, ¼ tsp salt, and ¼ tsp black pepper. Sprinkle this seasoning mixture evenly over the top of each salmon fillet. Drizzle or lightly spray with 2 tsp of oil.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flaky. Cooking time will vary based on fillet thickness.

Salsa and Serving:

  • While your salmon is cooking, it’s time to prepare the vibrant salsa. In a medium bowl, combine the 1 ripe diced avocado, 1 segmented and chopped orange, ½ finely chopped red onion, 20g (1/2 packed cup) finely chopped coriander leaves, and 1 thinly sliced Jalapeno pepper. In a separate small bowl, whisk together the 2 tbsp lime juice, zest of one lime, and 1 tbsp honey. Pour the dressing over the salsa ingredients and gently toss to combine. Season with a pinch of salt and pepper to taste.
  • Divide your steamed or boiled rice (approximately 300g or 1½ cups cooked rice for two people) between two serving bowls. Top each bowl with a perfectly cooked salmon fillet, half of the fresh avocado orange salsa, and some crisp chopped cucumber.
