Baked Parmesan Sprouts with Bacon

Ingredients
- 400 g (14 oz) sprouts
- 1 medium egg
- 1 tbsp cold water
- 75 g (3/4 cup) Parmesan cheese grated
- pinch salt and pepper
- 4 strips of fried or grilled bacon chopped into small pieces (smoked streaky bacon recommended)
- 2 tbsp finely chopped fresh parsley
Instructions

Preheat the oven to 200°C/400°F (fan). Prepare a medium baking tray.

Trim and peel any loose outer leaves from the sprouts and cut off the stalk ends. Halve the sprouts.

Break the egg into a bowl and whisk together with the water.

Put the grated Parmesan into a separate bowl.

Dip each sprout half into the egg, then roll in the Parmesan until fully coated. Arrange the coated sprouts on the baking tray and season with a pinch of salt and pepper.

Try to keep the sprouts in a single layer; a slightly snug fit is fine.

Bake for 15–20 minutes, until the Parmesan is golden and the sprouts are tender.

Remove from the oven, scatter over the cooked bacon pieces and chopped parsley, then serve immediately.
