These tacos, inspired by classic Buffalo wings, are a favorite at my house. They pack heat, balanced by the creamy ranch and the slight funk of blue cheese, and they’re just plain fun to eat.

Ingredients
For the Buffalo chicken tacos
- 1 lb (500 g) ground chicken
- ¼ cup buffalo hot sauce
- ¼ cup crumbled blue cheese
- 2 garlic cloves, crushed
- 1 teaspoon salt
- Black pepper, to taste
- 12 mini tortillas
- Olive oil, for cooking
For the slaw
- ½ a white cabbage, shredded
- 2 scallions (spring onions), finely sliced
- 1 tablespoon apple cider vinegar (or white wine or rice vinegar)
For the blue cheese ranch sauce
- ½ cup plain Greek yogurt (or mayo, sour cream, whipped cottage cheese, or crème fraîche)
- 1 tablespoon crumbled blue cheese (plus extra to serve)
- 2 teaspoons ranch seasoning
- A handful fresh chives, chopped (plus extra to serve)
- 1 tablespoon lemon juice
Method
- Mix the buffalo chicken topping. In a bowl combine the ground chicken, ¼ cup buffalo hot sauce, ¼ cup crumbled blue cheese, crushed garlic, salt and a generous grind of black pepper. Mix until evenly combined.
- Make the slaw. Toss the shredded cabbage with the sliced scallions and 1 tablespoon vinegar. Set aside to marinate briefly while you prepare the rest.
- Prepare the blue cheese ranch. In a small bowl stir together the Greek yogurt, 1 tablespoon crumbled blue cheese, ranch seasoning, chopped chives and lemon juice. Mash the blue cheese into the yogurt as you mix. Taste and adjust seasoning. If you prefer a thinner sauce, add a little water.
- Assemble the tacos to smash. Scoop heaped tablespoons of the buffalo chicken mixture and press each portion into a mini tortilla, spreading it thin and even to the edges (about 5 mm thick). Keeping the layer thin helps it cook quickly and crisp.
- Cook the tacos. Heat a large non-stick skillet over high heat and add a drizzle of olive oil. When the pan is hot, place a topped tortilla chicken-side down. Press firmly with a flat spatula to smash and adhere the topping to the tortilla. Cook about 4 minutes, then flip and cook another 30 seconds until the chicken is golden and crispy. Work in batches as needed.
- Finish and serve. Drizzle cooked tacos with the blue cheese ranch, top with crunchy slaw, extra chives and more hot sauce or blue cheese if desired. Serve hot.
