Here’s a quick and delicious summer treat: my spiced rum sorbet float. It’s easy to make, refreshing, and perfect for lazy afternoons or casual weekend entertaining.

Life’s been full-on lately — school holidays, family trips, finishing building work at home, birthdays and freelance deadlines — so I decided to create a simple cocktail that feels a little indulgent without any fuss.

The drink is built in layers: lemonade and lime juice on the bottom, a careful float of spiced rum, and a generous scoop of lemon sorbet on top. The effect is pretty and fizzy, and the sorbet adds a creamy, citrusy finish that’s irresistible on a warm day.

I love the layered look, though you’ll want to stir it before drinking so the flavors blend. The sorbet may foam a little when added, which just adds to the fun.

Ingredients

  • 240 ml (8oz) lemonade
  • Juice of one lime
  • 120 ml (4oz) spiced rum (such as The Kraken)
  • 4 scoops lemon sorbet

To Serve:

  • Lime slices
  • Orange slices

Instructions

  • Divide the lemonade and lime juice between two 12oz mason jars or tall glasses.
  • Very carefully and slowly pour the spiced rum on top so it forms a separate layer. Pouring over the back of a spoon that just touches the lemonade surface helps achieve this.
  • Add two scoops of lemon sorbet to each glass. The sorbet may foam a little—this is normal.
  • Garnish with lime and orange slices, add a straw, then serve. Stir before drinking to combine the flavors.
