Ingredients

Soup:

  • 1 tbsp olive oil
  • 2 skinless chicken breasts chopped into bite-size chunks
  • 1 onion peeled and chopped
  • 2 chilli peppers 1 chilli finely chopped, 1 chilli thinly sliced, I use fresno chillies
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 1 tbsp ground turmeric
  • 2 tbsp smooth peanut butter
  • 10 chestnut mushrooms or your favourite mushroom, sliced
  • 500 ml (2 cups + 2 tbsp) chicken stock use bouillon for gluten-free
  • 240 ml (1 cup) full-fat coconut milk
  • 150 g (5.3 oz) dried medium egg noodles you can replace with gluten-free rice noodles if needed
  • 1 lime juiced
  • pinch salt and pepper
  • 1 small bunch spring onions (scallions) chopped into 1-inch chunks
  • 2 tbsp cornflour optional, this is to thicken the soup if needed

To serve:

  • sliced chillies
  • 1 tsp chilli flakes

Instructions

  1. Heat the olive oil in a large sauce pan on a medium-high heat and add the chopped chicken. Cook for 5 minutes, turning regularly until sealed all over.

  2. Add the chopped onion and finely chopped chillies to the pan and continue to cook, stirring regularly for 5-6 minutes, until the onion softens.

  3. Stir in the ground coriander, cumin, turmeric, and peanut butter until the chicken is well coated with the spice mixture.

  4. Add the sliced mushrooms, chicken stock, and coconut milk to the pan. Bring the soup to a boil, then reduce heat and let it simmer gently for 20 minutes to allow the flavors to meld.

  5. While the soup is simmering, cook the noodles according to the package instructions (typically about 4 minutes in boiling water). Drain the noodles thoroughly and rinse them under cold water to stop the cooking process and prevent them from sticking. Drain again once cooled.

  6. After the soup has simmered for 20 minutes, stir in half of the lime juice and a pinch of salt and pepper. Taste the soup, then add more lime juice and seasoning as needed to reach your desired flavor balance.

  7. Add the chopped spring onions to the soup and cook for an additional minute or two until they are slightly softened. Then, stir in the pre-cooked noodles and heat through for 1-2 minutes.

  8. If you prefer a thicker soup, mix the 2 tablespoons of cornflour with 6 tablespoons of cold water to create a slurry. Add a splash of this mixture at a time to the simmering soup, stirring continuously, until it reaches your desired consistency.

  9. Turn off the heat. Divide the soup evenly among four bowls. I find it easiest to use tongs to place the noodles into the bowls first, and then ladle the rest of the flavorful soup on top.
  10. Garnish each serving with additional sliced chillies and a sprinkle of chilli flakes before enjoying.
