Ingredients

For the golden rice

  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 1/2 cups long-grain rice (like basmati)
  • 2 1/2 cups low-sodium chicken stock or water

For the green tahini drizzle

  • 1/2 cup tahini
  • 1/2 cup flat-leaf parsley leaves
  • 2 garlic cloves, peeled
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/3 cup water (adjust to desired consistency)

For the salad

  • 7 oz (200g) cherry tomatoes, chopped
  • 1 cucumber, finely chopped
  • 1/2 cup pitted olives, chopped
  • 2 oz (50g) creamy feta, crumbled
  • 1 teaspoon sumac
  • Black pepper, to taste

For the sticky ground beef

  • 1 lb (500g) lean ground beef (5–10% fat)
  • 4 garlic cloves, crushed
  • 2 teaspoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon harissa paste (adjust to taste)
  • 1 tablespoon pomegranate molasses
  • 1/2 teaspoon salt
  • Black pepper, to taste

Instructions

  1. Toast the rice in the spices. Heat a medium saucepan over medium heat. Add 1 tbsp olive oil, then 1 tsp each ground turmeric and cumin. Cook until fragrant (about 1 minute). Add 1 1/2 cups rice and stir to coat. Toast for 2 minutes, stirring often.
  2. Simmer the golden rice. Add 2 1/2 cups chicken stock or water. Bring to a boil, then reduce to the lowest heat, cover, and cook undisturbed for 15 minutes. Remove from heat and keep covered for 10 minutes, then fluff with a fork.
  3. Make the green tahini sauce. Blend 1/2 cup tahini, 1/2 cup parsley, 2 garlic cloves, 3 tbsp lemon juice, 1/2 tsp salt, and 1/3 cup water until smooth. Adjust water or tahini to reach a heavy cream-like consistency. Taste and season as needed.
  4. Make the salad. Toss tomatoes, cucumber, olives, and feta with 1 tsp sumac and a grind of black pepper. Set aside.
  5. Cook the sticky ground beef. In a large skillet over medium-high heat, add the beef and break it up. Cook 3 minutes until browning begins. Add crushed garlic, 2 tsp cumin, 1 tbsp smoked paprika, 1 tbsp harissa, 1 tbsp pomegranate molasses, and 1/2 tsp salt. Stir to combine.
  6. Finish the beef. Continue cooking about 7 minutes, stirring occasionally, until the beef is glossy, sticky, and caramelized. Remove from heat.
  7. Assemble the bowls. Divide rice between bowls, top with the sticky beef, add the salad, and finish with a generous drizzle of green tahini sauce. Serve with flatbread or pita chips if desired.
