For years I dismissed microwave mug cakes on Pinterest as dense and rubbery. Instead I focused on quick single-serve desserts like peach and almond cake or no-bake Snickers bites. I was wrong: when done right mug cakes can be light and fluffy, rising in the microwave almost like a mini soufflé. Adding a few Rolos gives a molten caramel center, and a scoop of ice cream makes it even better.

I mixed the batter in a jug because I’m messy, then poured it into a mug. If you prefer, you can mix directly in the mug to reduce washing up — a single cup, spoon and fork is about as no-fuss as dessert gets.

Ingredients

  • 2 tbsp unsalted butter
  • 2 tbsp chocolate chips
  • 3 tbsp plain / all-purpose flour
  • 2 tbsp cocoa powder
  • ¼ tsp baking powder
  • 3 tbsp light brown sugar
  • 2 tbsp milk
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 1 small egg, lightly whisked
  • 4 Rolos or other chocolate-covered caramels

To serve:

  • Chocolate chips and confectioners’ sugar

Instructions

  • Place the butter and chocolate chips in a jug and melt in the microwave (about 30–60 seconds), stirring until smooth.
  • Add the flour, cocoa powder, baking powder, sugar, milk, vanilla extract, a pinch of salt and the whisked egg to the jug. Whisk until well combined.
  • Pour the batter into a mug and press the 4 Rolos into the centre.
  • Microwave for 90–110 seconds, until the cake has risen over the rim and is set on top (avoid overcooking to keep it light).
  • Remove carefully — it will be hot — and top with extra chocolate chips and a dusting of confectioners’ sugar. Serve with ice cream if you like.
