Salsa isn’t just for dipping — it makes a ready-seasoned sauce, so there’s no need for extra salt or pepper in this recipe. Kids love this Salsa Chicken as a weekend treat, served in big scoops with a mountain of nachos.

Nicky’s Recipe Notes
This salsa chicken is perfect for busy evenings. Golden, gooey cheese combines with tender rotisserie chicken and zingy salsa — all scooped up with crunchy tortilla chips. It’s a one-dish midweek lifesaver that’s ready in 30 minutes and keeps washing up to a minimum.
Why you should try this chicken salsa bake:
- No raw meat to handle — this uses cooked rotisserie chicken, so prep is quick and easy.
- One-dish meal — fewer dishes and less fuss.
- Salsa as the sauce — use fresh or jarred, mild or hot, chunky or smooth.
- Easy to customise — top with avocado, sour cream, extra jalapeños, olives, or your favourite hot sauce.

Pro Tip
Serve the baked salsa chicken over warmed nachos for an impressive party platter. Heat nachos in the oven for 5 minutes, lay them out on a serving tray, then spoon the cheesy chicken on top so the melted cheese stays intact. Finish with onion, coriander and extra jalapeños, and offer sour cream on the side.
This recipe is an excellent way to turn leftovers into a flavour-packed, family-friendly dinner.

🍽️ What to serve it with
- Serve on a bed of tortilla chips or white rice.
- Use homemade salsa if you prefer; it works just as well as store-bought.
- Top with marinated onions, sour cream or a drizzle of buffalo-ranch for extra flavour.
I love recipes where you can toss everything into one dish and bake — it makes weeknights a lot easier.

I don’t recommend making this ahead or freezing it. The recipe reheats cooked chicken in the salsa sauce, and it’s best not to reheat food more than once.
