Ingredients

For the sweet chili chicken topping –
  • 1 lb ground chicken (500g)
  • 2 garlic cloves, crushed
  • 1-inch piece of ginger, grated
  • 1 tablespoon light soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons fish sauce
  • 1 tablespoon sweet chili jam, or sweet chili sauce
For the slaw –
  • ½ white cabbage, shredded
  • 2 scallions (spring onions), finely sliced
  • 1 tablespoon rice vinegar (or apple cider or white wine vinegar)
For the toppings –
  • Sweet chili jam or sweet chili sauce for finishing
  • A handful of cilantro (coriander leaves)
  • Sesame seeds or furikake seasoning

Method

  1. Mix the chicken topping.

    Add the ground chicken to a mixing bowl with the crushed garlic, grated ginger, 1 tablespoon light soy sauce, 1 tablespoon sesame oil, 2 teaspoons fish sauce and 1 tablespoon sweet chili jam. Mix until combined.

  2. Make the slaw.

    Toss the shredded cabbage with the sliced scallions and 1 tablespoon rice vinegar. Set aside to allow the flavors to meld.

  3. Press the chicken onto your tortillas.

    Scoop a heaped tablespoon of the chicken mixture and press it onto a mini tortilla, smoothing to the edges with the back of a spoon. Aim for a thin, even layer (about 5 mm) so the topping cooks evenly. Repeat with remaining tortillas.

  4. Cook the smash tacos.

    Heat a large frying pan or skillet over high heat and add a drizzle of olive oil. Place a topped taco chicken-side down and use a flat spatula to press it firmly into the pan. Cook for about 4 minutes, flip, then cook for another 30 seconds until the tortilla is golden and the chicken is cooked through. Depending on pan size you can cook several at once.

  5. Top and serve.

    Drizzle each taco with extra sweet chili jam or sauce, divide the slaw between the tacos, then scatter cilantro and sesame seeds (or furikake) on top. Serve hot.

HOW TO MAKE SURE YOUR TOPPING STICKS TO THE TORTILLA: Spread the topping into a thin, even layer (around 5 mm). Use a non-stick pan and press the taco firmly into the hot pan with a flat spatula. A hot pan helps the topping set quickly and adhere to the tortilla.

INGREDIENT NOTES: Ground chicken can be swapped for turkey, pork, beef or a plant-based alternative. Use a store-bought slaw mix for convenience. For extra creaminess try a drizzle of garlic aioli, Kewpie mayo or spicy gochujang mayo. Corn or flour tortillas both work well.

PREP AHEAD NOTES: Mix the chicken topping up to 3 days ahead and store it airtight in the fridge. You can top the tortillas up to 24 hours ahead — stack them with parchment between layers and keep refrigerated. The slaw will keep for up to 3 days in the fridge.
