A Lovely Light Bite For Any Kind of Entertaining
I love a spread of little party bites, but they tend to lean heavily on carbs. Which, as a carb lover, is not necessarily a bad thing, but it’s nice to have something lighter and fresher on the table too. And these smoked salmon bites absolutely tick that box:
- They’re a boujee twist on the classic flavor combo. Boursin – a gorgeously dreamy, garlicky, herby soft cheese – instantly levels the bites up. Maximum flavor with zero effort.
- Scales like a dream. Whether you’re hosting two friends or 20, these bites are a brilliant option.
- Balanced flavors and textures. Creamy cheese, silky salmon, tangy pickles, bright lemon, and crispy cucumber. Genuinely a perfect bite.
- A healthy-ish option. They feel fancy and fresh without being heavy.
- Make-ahead friendly. Everything can be prepped in advance, and arranged a few hours before you want to serve.

Ingredients You’ll Need

- Smoked salmon. You can either chop up your smoked salmon or keep it in longer strips – whatever you prefer visually. I actually love using smoked salmon trimmings for these – they’re much cheaper, and absolutely fine to use for a little bite like this.
- Cucumber. Try to find a long, thin cucumber that’s reasonably even in size, for more uniform bites.
- Boursin. This garlicky, herby soft cheese is like a better, thicker version of cream cheese. It instantly elevates these bites into something special. If you can’t find it, regular cream cheese still works.
- Pickledonions. These add a zingy, fresh pop of color that pairs perfectly with the rich salmon and cheese. Capers or chopped dill pickles are great swaps.
- Nigella seeds. I love these for a little extra crunch and subtle onion vibe. Use black sesame seeds if you can’t find them, or use everything bagel seasoning or dukkah.
Step-by-Step: How to Make Smoked Salmon Cucumber Bites

- Whip the Boursin cheese – you can do this in a small food chopper or processor, or just mix it up with a fork. This aerates it and makes it easier to spread.

- Slice your cucumbers into rounds, roughly ⅓” or so in thickness. Pat them dry with a kitchen towel to remove any excess water.

- Spoon a heaped teaspoon of the whipped Boursin onto each cucumber round.

- Arrange a little smoked salmon on top.

- Top with the pickled onions, then scatter with nigella seeds, chives, and lemon zest.

- Serve with lemon wedges on the side.

My Time-Saving Trick For Larger Parties
If you’re planning on making a lot of these bites or hosting a large crowd (I’ve made them for office parties before!), this is my favorite little shortcut.
- Blitz the smoked salmon and the Boursin together in a food processor, then transfer to a piping bag and store in the fridge until you’re ready to assemble.
- Then, you can easily and speedily pipe the topping onto your cucumber slices, directly on your serving platter.
- Scatter your pickles, lemon zest, seeds, and chives over the top, and you’re done.
Doing this turns the topping into more of a silky mousse and makes assembly less fiddly when you’re preparing lots of these in one go.
Smoked Salmon Cucumber Bites FAQs
Can I make the smoked salmon cucumber bites in advance? You can! Once assembled, they’re fine for a fair few hours in the fridge – just keep them lightly covered until you’re ready to serve. I like to make them in the morning if I’m serving them later in the day.
The individual elements can also all be prepared in advance:
➡️ Whipped Boursin: will keep for up to five days in the fridge.
➡️ Cucumber slices: can be cut two to three days ahead of time – just pat them dry again when you get them out of the fridge.
Definitely. Cream cheese is perfect here. If you spot a garlic and herb flavored version, that’s even better. It mimics Boursin beautifully. You could also mix regular plain cream cheese with a little crushed garlic and chopped herbs (thyme, parsley, oregano, and chives are great)
Is cold-smoked or hot-smoked salmon best? You can use either!
➡️ Cold-smoked: this gives you the classic, silky smoked salmon vibe.
➡️ Hot-smoked: flakier, a little richer, and more substantial.
Go for what you like best, or whatever is easiest for you to find.
I recommend not leaving them out for longer than 3 hours – less if you’re in a hot climate. If you want them out longer, or if it’s hot, set out a smaller plate and keep the rest in the fridge. Then you can refill it when needed.
How many smoked salmon bites should I make per person? If you’re serving a lot of other snacks and appetizers, plan for 3 bites per person. If you only have a few options, I’d plan for 5 or 6 per person. These are very easy to eat and always crowd-pleasers, so I recommend making more than you think you’ll need if you’re a little unsure.

Ingredients Method Nutrition Notes
Ingredients
- 1 cucumber
- 5 oz smoked salmon, sliced into small pieces, (about 150g)
- 1 box Boursin cheese, (5.2oz)
- ¼ cup pickled red onions, chopped
- A handful of fresh chives, finely chopped
- Zest of 1 lemon
- Nigella seeds, to garnish (or use black sesame seeds, everything bagel seasoning, or nutty spiced dukkah)
Method
- Slice your cucumber. Cut your cucumber into slices, about ⅓ inch thick. You want to make sure they're reasonably thick slices, as anything too thin won't be able to support the topping. Lay the slices out and gently pat them dry with a paper towel to remove any excess moisture – this helps the topping stay put.
- Whip the Boursin. You can do this in a small food chopper or processor, or by hand in a bowl. Whipping the cheese aerates it and makes it smoother, so it's easier to spread.Blitz the Boursin for a couple of minutes, until light and smooth (or mix and break up with a fork until smooth).
- Assemble the bites. Spoon a heaped teaspoon of the Boursin onto each cucumber slice, then top with a little pile of smoked salmon. Divide the chopped pickled onions on top, then finish with the nigella seeds, chives, and the lemon zest. You can also transfer the whipped Boursin into a piping bag and pipe it onto the cucumber slices. It tends to be quicker this way, even though it's an extra step.
